Blackberry Muffins
Blackberry season is almost over, so I stocked up on some juicy blackberries from the local farmer's market to make these muffins.
This instructable will show you how to make them too.
Ingredients
You will need:
1 c blackberries
2 1/2 c all-purpose flour
2 eggs
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp baking soda
2 tbsp milk
1/2 tsp ground cloves
1 c yogurt (I used the light vanilla kind)
1 tbsp baking powder
8 tbsp melted butter
1 c sugar
1 tsp vanilla extract
First Bowl
In a large bowl, you are going to combine the flour, baking powder, baking soda, cinnamon, salt and ground cloves.
In Another Bowl..
In a separate bowl combine the sugar, eggs, vanilla, milk, butter and yogurt together.
Mix Both Mixtures Together
Pour the second bowl into the first and mix all the ingredients together.
Blackberries
Cut the blackberries in half, then sprinkle them with 2 tbsp flour. This will keep them from sinking to the bottom of the mixture.
Add the Blackberries
Fold the blackberries into the mixture.
Fill the Muffin Pan
Spray the muffin pan with non-stick cooking spray.
Fill the batter to the top of the pan.
Bakin'
Bake in an oven that's been preheated to 400° for 17-20 minutes, or until you can stick a fork in a muffin and it comes out clean.
