Blackberry Almond Streusel Coffee Cake

Cake for breakfast? Yes, please!!! This coffee cake is elegant enough for a special occasion, but with the use of a boxed cake mix, it is quick and easy enough to whip up any day. It's perfectly balanced, not too sweet and packed with fresh fruit and nuts. And, as the name implies, it's perfect with a cup of coffee for breakfast or any time.

Ingredients and Tools:

Ingredients

Streusel Topping:

  • 1/2 cup flour
  • 1/3 cup sugar
  • 4 tablespoons unsalted butter, melted
  • 1/2 teaspoon lime zest
  • 1/2 cup sliced almonds

Cake:

  • 1 box yellow cake mix (15.25 ounce)
  • 2 large eggs
  • 1 cup sour cream
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla
  • 2 cups fresh blackberries

Tools:

  • 10 inch springform pan
  • mixing bowls
  • measuring cups and spoons
  • whisk
  • spatula

Make the Topping:

Combine flour, sugar and lime zest in a small bowl. Pour in melted butter and mix until crumbly.

Combine eggs, sour cream, melted butter and vanilla in a mixing cup or bowl. Put cake mix in a large bowl. Add egg mixture and fold gently to combine. Do not overmix.

Assemble the Coffee Cake:

Grease the bottom and sides of the springform pan. Pour batter into pan. Evenly distribute blackberries on top of the batter. Sprinkle streusel topping over berries. Sprinkle sliced almonds on top.

Bake in a 350 degree Fahrenheit oven for 38 - 42 minutes, until a toothpick inserted in center comes out clean and the topping is golden brown. Cool on a wire rack for 20 minutes. Then remove sides from springform pan and place cake onto a serving plate if desired.
