Biscuit Bites

Dear Readers,

I'm so glad that you have looked at this little post! These biscuits are delicious warm or cold, made with a few simple ingredients, and are smaller than a cracker. Quick and easy, perfect for sprinkling on top of soups or just eating plain or with butter and jam. The secret to their amazing aroma and flavor is a few tablespoons of bacon grease. If you do not have this lying around, substitute for and two tablespoons of melted butter.

Supplies

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 5 tbsp unsalted cold butter
  • 3 tbsp bacon grease (or 2 tbsp melted butter)
  • 3/4 cup milk

Special Equipment:

  • Mini cookie-cutter

Preheat the Oven

Preheat the oven to 450 degrees F.

Mix the Dry Ingredients

In a large bowl, mix the flour, baking powder, and salt.

Cut in the Oil

Mix the bacon grease into the mixture, don't worry about it being chunky, you'll get rid of that problem later. Put the butter into the bowl, and using a fork or a pastry cutter, "cut" the butter into the flour. Continue to cut the butter in with the fork and your bare hands, until the mixture is crumbly.

Add the Milk and Make the Dough

Add the milk into the mixture, stirring with a wooden spoon until you can't stir anymore. Put some flour onto your hands (my recomendation is to keep a jar of flour and a jar of warm water handy while making any kind of pastry dough) and switch to mixing with your hands. Keep mixing until the dough is bread like, adding flour where the dough is sticky and water where it is crumbly.

Cut Out the Biscuits

Sprinkle some flour on the work surface, and place the dough on the counter. Gently knead the dough a few times. Pat the dough into a large circle that is about the thickness of your pointer finger (Note: my fingers are not incredibly big nor small, adjust the finger you used based on the size of your fingers). Using the mini cookie-cutter, cut out the biscuits and place them on two ungreased baking sheets.

Bake the Biscuits

Bake the biscuits at 425 degrees F, for 10-15 minutes, or until slightly browned on the sides. Cool slightly and serve warm or chilled with a little butter or jam.
