Simple N. Indian Way to make okra.
Ingredients:
- 1 pound of okra
One large yellow or red onion
1 teaspoon cumin seeds
2 tablespoons oil
1 teaspoon salt
Half teaspoon turmeric powder
Half teaspoon chili powder

Prepare the Okra

I have here a pound of okra. Selection of the okra is an important step. You want to buy as fresh as possible from the farmers market. You want to select pods that are not limp and if you were to break into two pieces have a nice snap. Also you do not want to buy pods that are very fat or very hard.
At home wash the okra thoroughly and then either leave them out to dry for 30 minutes or so or towel dry the okra individually. The okra should be completely dry before you cook them. Otherwise they will become mushy or slimy.

Cut Okra and Onion

Cut okra into 1 cm sized pieces after cutting off the hard head of each okra. Also slice a large onion.

In a wok, on medium high heat (that's five on my stove) heat up 2 tablespoons of oil. I like to use coconut oil. When hot add in a teaspoon of cumin seeds. (Before adding all of the cumin, add in one cumin seed and if it starts to sizzle you know the oil is ready).
When cumin is cooked, add the onion. Cook for 5 to 8 minutes until the onion is golden With a few dark spots. When the onion is cooking stir occasionally.

When onion is done cooking add the okra, half a teaspoon of turmeric, half a tea spoon of red chili powder, 1 teaspoon of salt. Mix it together thoroughly. Next reduce the heat cover the walk and let cook for 10 to 15 minutes. Store every few minutes, otherwise some of the okra will stick to the bottom of the pan and burn.

Cook until you grow is soft but not mushy. Check the taste and add more salt or chili powder if you want. You are done
