Best S'more Cookies
They’re like campfire s’mores but in cookie form so you don’t need a fire pit. The cookies are soft, the marshmallows get super gooey, and the graham crackers add the perfect crunch. I wanted to bake something fun that would look awesome in photos and these turned out ridiculously delicious.
Supplies
Dry Ingredients
- 1 ½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
That extra ¼ cup of flour will:
- Make the cookies hold their shape better
- Reduce spreading
- Give a thicker, more “chunky” campfire cookie
Perfect for s’mores.
Wet Ingredients
- ½ cup butter, softened
- ½ cup brown sugar
- ¼ cup white sugar
- 1 egg
- 1 tsp vanilla
1. Get Your Baking Tray Ready
- Put parchment paper on a baking tray
- OR lightly grease it if you don’t have parchment
This keeps the cookies from sticking.
2. Mix the Dry Stuff
Find a medium bowl and add:
- Flour
- Baking soda
- Salt
Stir with a spoon until it looks even.
3. Make the Butter & Sugar Mixture
In a big bowl:
- Add the softened butter
- Add brown sugar
- Add white sugar
Use a mixer (or a whisk + muscles) to mix until smooth and creamy.
4. Add the Egg + Vanilla
Crack 1 egg in.
Add 1 tsp vanilla.
Mix again.
5. Combine Wet + Dry
Pour the dry bowl into your big bowl.
Mix until it becomes cookie dough.
(Don’t over-mix — just until it comes together.)
6. Add Your Chocolate Chips + Graham Crumbs
- Dump in the chocolate chips
- Crush the graham crackers with your hands and add them too
Stir gently until everything looks mixed in evenly.
7. Scoop Your Cookies
Use a spoon or a cookie scoop:
- Make 12–14 balls
- Put them evenly on the baking tray
- Leave space between them so they don't crash into each other
8. Time to Bake (Part 1)
Bake at 350°F for 8 minutes.
They’ll look puffy and soft — that’s perfect.

9. Add the S’mores Topping
This is the fun part.
Take:
- ½ marshmallow (flat cut side DOWN on the cookie)
- One small chocolate square (optional)
Press them gently into each warm cookie.
Put the tray back in the oven for 2–3 more minutes.
The marshmallows should:
- Get a little golden
- Look melty
- Stay fluffy
If they turn into lava?
Pull them out early, they’re done.
Optional:
Take a blow torch to the Marshmallows. They start to burn right away, so blow them out right away.
