Best Ever Coffee Beans Cookies

Hello everyone!

I'm Helen. Today I'm delighted to share with you recipe of the Coffee Cookies that shaped as coffee beans. There are plenty of the recipes for coffee cookies and ways to bake them. I've tried a lot of recipes of such coffee cookies, but every time there was something wrong with the end result. After some experiments I've reached the result that fits my taste. Below will be a comprehensive description of the cooking steps, after reading each you can choose and decide what to put in the dough. It's not obligatorily to follow exact steps in shaping cookies, you can use any cookie cutter, or favourite method to cut and bake the tasty coffee cookies.

So, let's start.

Ingredients

* 200g flour

* 30g cocoa powder

* 1/2 tsp baking powder

* 50g unsalted butter

* pinch of salt

* 100g powdered sugar (For those who like more sweetened taste, extra 20g could be added)

* 3 egg yolks (could be substituted with one whole egg)

* 30g sour cream

* 1 tsp coffe extract

* 2 tsp instant coffee (could be substituted with 30 ml of strong espresso)

Make the Dough: Step 1

Put the butter, powdered sugar, pinch of salt and instant coffee to the mixer's bowl. Start mixing on the low speed and gradually increase the mixer's speed to the high. On this stage a special attention have to be paid to the whipping. All ingredients have to be mixed in the consistent mixture that is doubled in the initial size. This stage depends on the mixer type, it's power and takes about 5-10 minutes. Add coffee extract and turn on mixer for another one minute.

NOTE: If you are not going to use instant coffee and decided to add espresso, it have to be cooled and added with coffee extract.

On this step you have to turn the mixer to the low speed and add egg yolks (or whole egg) one at the time. Continue mixing until all stuff uniformly mixed.

Add the sour cream into the base and mix.

In this step use the suitable for dough whisk from your stand mixer manufacturer. In the separate bowl mix the flour, baking powder and cocoa powder. Add dry ingredient to the mixer's bowl and mix until all stuff uniformly mixed, usually it takes 1-2 minutes.

Scrap the bowl, put the dough into a plastic bag and make it chill in refrigerator for ≈1 hour.

Shape the Coffee Beans

Roll the dough like on the first attached photo. Cut for a small pieces. Shape the dough in ovals. Use any handy tool, like back side of the table knife, or tooth picks to create a middle line of the coffee bean. See attached photos for reference.

Bake

Preheat the oven to the 180 ˚C.

Put the shaped beans to the backing sheet, e.g. in the checkers order. Put into the preheated oven and bake for 10-15 minutes. Take from the oven and let them cool.

NOTE: Baking time depends on cookies size, smaller one will be ready a bit faster.

From listed amount of ingredients you can get about 40 coffee beans with ≈4 cm tall. If you wait some friends who adore coffee, be prepared and bake double amount of cookies :-)
