Best Ever Chocolate Chip Cookies

Many bakers will declare they have the perfect chocolate chip cookies recipe; It is a classic after all,

However, this recipe will change everything!

I've been making these cookies for the last few years, and anyone who taste them admits he cannot longer eat any other chocolate chip cookie.

If you find it hard to believe that these cookies will be better than your current favorite, just make ONE batch, I promise you, you will never need another recipe.

Ingredients

225g cold butter, cut into cubes

1/2 cup sugar

3/4 cup light brown sugar

3/4 cup dark brown sugar

2 eggs

3 cups flour

1.5 tsp. salt

3 tsp. cornstarch

1.5 tsp. baking powder

1/4 tsp. baking soda

1 cup dark chocolate chips (semi sweet)

Optional- 1/2 cup walnuts

1/4 block of dark chocolate

1 cup white chocolate chips

Optional- 1/2 cup dried apricots

Preheat oven to 190 degrees Celsius (375 degrees Fahrenheit).

In a mixer bowl put cold butter, white sugar, light brown sugar and dark brown sugar.

Whisk the butter and sugar together until light and well blended.

Add one egg and keep whisking, until well blended.

Add the second egg and whisk again until well blended.

Add flour, salt, cornstarch, baking powder and baking soda to the butter mixture.

Use the mixer to bring the dough together until smooth.

It should be very thick.

Divide the dough in half.

Add dark chocolate chips (and walnuts) to one half.

Grate the dark chocolate block, using a fine grater, into the dough.

Mix well.

Add white chocolate chips, dried apricots and grated white chocolate block into the other half of the dough.

Mix well.

Prepare four baking trays with parchment paper.

Create ball shaped cookies and place on baking trays, make sure you leave at least 5 cm in between.

If you want them to be huge, you should aim for around 15 cookies. I made them quite large as well; it turned out to be 24 cookies.

Don’t flatten the balls at all.

Bake for about 10-12 minutes. Larger cookies can take a few more minutes.

Watch them closely and take them out before they have the chance to brown.

Let cool completely!
