Ingredients & Tools
Ingredients
- 1 ¼ cups all-purpose flour
- 1 t baking soda
- ½ t salt
- 2 eggs room temp
- ½ t vanilla extract
- ½ t coconut extract
- ½ C unsalted butter room temp
- ¾ C sugar
- 3 ripe bananas, peeled and mashed up
- ½ c chopped walnuts
Tools
- Loaf Pan
- Hamilton Beach Hand Mixer
- Oven Mitts
- Whisk
- Spiral Whisk
- Pyrex Mixing BowlMeasuring Cup
- Misc. Kitchen Utensils
Dry Ingredients
Preheat oven at 350 F and grease a 9x5 loaf pan with cooking spray.
Whisk together flour, baking soda, and salt in a medium to large mixing bowl until it is well combined.
Wet Ingredients
Whisk the eggs, vanilla, and coconut together in a separate bowl until those are well combined also.
Cream Butter and Sugar
In another medium mixing bowl, begin to cream butter and sugar together, add in eggs and continue mixing until it all comes together.
Add Bananas
Add bananas to the mixture and continue mixing. If it looks curdled don't worry that is how it should look!
Mix Wet and Dry
Add your dry ingredients to your wet ingredients and using a spatula, fold the mixture together. Add in the nuts and fold those in as well.
Pour Into Loaf Pan
Pour batter into loaf pan and add extra nuts on top to give it a beautiful presentation!
Bake
Bake for 50 mins or until toothpick comes out clean (I baked mine for 60 minutes total but it all depends on your oven).
Cool, Cut and Enjoy!
Cool for 10 minutes in pan and remove and put bread on cooling rack to cool completely.
Dust the top with some extra powdered sugar if you prefer and cut into it. (If you have the patience to leave it overnight, it will taste even better).
Enjoy!
