Berry Good Pancake Muffins

Learn how to make a delicious muffin out of everyones favorite breakfast... PANCAKES! Berry Good Pancake Muffins are a healthy alternative to normal pancakes and can be mass produced in under 30 minutes with little mess. Since there are very few ingredients Berry Good Pancake Muffins can be created in seven easy steps. To begin set your oven to 375 degrees Fahrenheit.

Making Pancake Mix

Use measuring cup to measure out 1 1/2 cup of all-purpose flour. Once the correct proportions are used pour into a large bowl. Next, Take the single egg and without making a mess, crack the shell. After cracking pour yolk into the flour. Measure out 3 1/2 teaspoons of baking powder. When measurements are complete pour the baking powder into the mix. Once completed Take the measuring cup and fill up 2 cups of water. Then pour the water into the muffin mix. This all should take around two minutes.
Mixing

Once done adding the ingredients into the bowl grab the whisk. Put the whisk into the bowl and stir in circular motions around the bowl. Continue stirring until the consistency of the mixture is somewhat smooth.
Pouring

Once done whisking, batter should look somewhat like this. Take out the muffin tray, as well as the muffin rappers. Put rappers into each of the wells making sure they cover the metal tray fully. Now take a spoon and slowly scoop out the mixture. Cautiously pour into each of the wells. When pouring make sure to fill up the well half way and not any higher than that. Once poured grab both ends of the tray and gently sake until the batter evens out in all of the wells.
Adding Filling

Once done the mixture should look like this. Now, add your choice of fresh fruit (in this case blueberries) into each of the wells containing batter. Make sure to evenly distribute the fruit. Take the tip of a spoon and gently push the Berrys into the batter so they don't fall out when they rise.
Baking

Very carefully put the tray into the already pre-heated oven. Set a timer for 20 minutes and wait for the muffins to cook. Check periodically to make sure the muffins are rising correctly.
After Baking

After baking carefully pull the tray out of the oven. Check to see if they cooked all the way using a toothpick. If they did not then place back in the oven for 5 more minutes. If they are fully cooked let the pancake muffins cool for 5 minutes in order to prepare for the toppings.
Toppings

Once the Muffins have cooled take a spoon and spread your choice of yogurt evenly over the top of the muffin. Be sure to cover the whole top. After the Yogurt is added, add your choice of fruit to the top of the muffin for decoration and flavor.
