Berries for Bears Cookies
Cute and delicious bears, enjoying a treat of their own! A simple icebox cookie recipe turns into a delightful friend to enjoy with your tea!
Supplies
Stand mixer
spatula
large bowl
rolling pin
Parchment paper
cookie sheet
1.5 cups unsalted butter
1.75 cups sugar
2 eggs
1 tsp salt
0.66 cups milk
1tbsp vanilla extract
5 cups all purpose flour
0.125cups cocoa powder
1tsp cinnamon
icing & berry shaped candy for decorating
Mixy Mixy Your Vanilla Dough
Cream butter and sugar in mixer until fluffy, add eggs & salt until combined, then add milk & vanilla. Once all wet ingredients are combined, slowly incorporate the flour.
Separate Dough
Scoop 2/3 of vanilla dough into separate bowl
Make Chocolate Cinnamon Dough
Add cocoa and cinnamon to remaining dough in mixer and mix until combined
Make Chocolate Middle
Sprinkle counter with flour, and roll chocolate dough into log 1.5-2inches in diameter. Place in fridge for 60min.
Roll Out Vanilla Dough
Roll vanilla dough into rectangle the length of the chocolate log, and wide enough to wrap around the log. Place in fridge for 60 min.
Combine Chocolate and Vanilla Pieces
Once dough is chilled, brush vanilla rectangle and chocolate log with egg wash. Place chocolate log in the middle of the rectangle, and wrap snugly. Place back in fridge for 60min.
Slice Your Cookies!
Slice your log into rounds 0.5 in thick, and place on parchment lined cookie sheet. Use extra vanilla dough to add head, ears, and legs. Have fun with this part!
Bake!
Bake at 350 degrees F for 15min
Decorate!
Decorate and enjoy!
