Belgian Waffles With a Coconut Oil/cream Cheese Twist (Valentine's Day Edition)

I love waffles, and I bet most girls do.  So for all those who are planning the breakfast in bed thing, consider these as an option she/or he will love!

Belgian Waffles
Dry ingredients:
1 cup of cake flour
1/2 cup of all purpose flour
3/4 tsp of baking powder
1/4 tsp of salt
Wet ingredients:
Sour cream replacement (see below)
1 tbs of vanilla
3 tbs of coconut oil (melted)
3 egg yolks
3 egg whites (these will be beaten individually in order to create a fluffier waffle)

Sour cream replacement:  
2/3 cups of water or milk if you want a richer denser waffle
1 cheese cream block
4 drops of Red food coloring (optional for valentine's day edition)

YIELDS 4 BELGIAN WAFFLES
Toppings: Any
I used strawberries and honey

Gather Your Ingredients

Belgian Waffles
Dry ingredients:
1 cup of cake flour
1/2 cup of all purpose flour
3/4 tsp of baking powder
1/4 tsp of salt
Wet ingredients:
Sour cream replacement (see below)
1 tbs of vanilla
3 tbs of coconut oil (melted)

3 egg whites (these will be beaten individually in order to create a fluffier waffle)

Sour cream replacement: 
2/3 cups of water
1 cheese cream block

Make Sour Cream Replacement

Sour cream replacement: 
2/3 cups of water
1 cheese cream block
4 drops of Red food coloring (optional)

Combine the water and cream cheese in blender, with hand held mixer or food processor until smooth.  The silky mixture will stick to the sides of the container.

Whisk Dry Ingredients Evenly

Whisk Wet Ingredients

Wet ingredients:
Sour cream replacement
1 tbs of vanilla
3 tbs of coconut oil (melted)
3 egg yolks
3 egg whites (these will be beaten individually in order to create a fluffier waffle)

Whisk in Vanilla, egg yolks, sour cream replacement, and coconut oil together

Beat the egg whites until fluffy and set aside.  DON'T SKIP THIS STEP, it is what gives the waffle the fluffiest results, also it makes the end product eclair like in texture.

Combine Wet and Dry Ingredients

Combine ingredients with the exception of the egg whites with a wooden spoon.

The mixture will become lumpy.  Fold in the egg whites and continue mixing till the mixture becomes smooth.

Using an additional 1/2 tbs of coconut oil, grease the waffle iron.

I used a napkin soaked in coconut oil.

Pour the mixture on the waffle iron, and cook according to your waffle iron's settings.


Decorate

Using kitchen shears, cut the pieces into hearts and drizzle honey on top.
