Beef Enchiladas

Beef Enchiladas are a great dish for any event. They aim to please both adults and children. Your guests will begin to request them at future events once they experience them.

Supplies

Glass rectangle pan

Large Skillet

Cooking Butter Spray

Salt & Pepper

1 package of enchilada seasoning

8 - 10 flour tortillas

3 cans of red enchilada sauce

2 tomatoes

1 white onion

2 pounds of ground beef

7 oz of shredded Mexican cheese

Tablespoon measuring spoon

Teaspoon measuring spoon


Cook Ground Beef

Add the 2 pounds of ground beef to the skillet and brown until done. After fully cooked, drain excess grease from the ground beef using a drain or paper towels.

Chop Up Onions & Tomatoes

Before beginning this step, turn on your oven to 350 degrees to allow it time to preheat as you prep your beef tortillas. Place tomatoes and onions on a cutting board and cut them up into small diced size pieces.

Add Onions

Using the same skillet that you cooked the ground beef in, place half of the diced onions into the skillet. No need to rinse the pan. The grease will add flavor to your onions. Sautee the onions until lightly brown then add the ground beef that has been drained of excess grease back into the skillet. Cook the ground beef and sauteed onions for a few minutes to add flavor to the ground beef.

Add Enchilada Seasoning

Add the package of enchilada seasoning to your ground beef and onion mixture. Make sure to mix thoroughly. Then add half a can of enchilada sauce to the meat mixture and stir until completely joined together.

Prepare Your Glass Pan

First, take the cooking butter spray and lightly coat the glass pan. This will prevent your beef tortillas from sticking to the glass pan while cooking. Then pour the remaining half of the first can of enchilada sauce into the glass pan.

Coat Your Tortillas

Use the enchilada sauce in the glass pan to lightly coat your flour tortillas. You will flip the tortillas to coat both sides with tortilla sauce. Doing this will allow your tortillas to roll up without tearing but can be a bit messy.

Fill Your Tortillas

Once you have coated both sides of your tortillas with enchilada sauce, you can now begin to fill them. Place approximately three tablespoons of your cooked ground beef and sauteed onion mixture into the tortillas. Then add a teaspoon of diced raw onions, a teaspoon of diced tomatoes, and a tablespoon of shredded Mexican cheese on top of your ground beef and sauteed onion mixture.

Roll Up Your Tortillas

Once you have filled your tortillas you will then roll them up. Folding the ends of the tortillas inward will prevent your tortillas from falling apart as you roll them. You will repeat this process filling 8 to 10 tortillas. Once you have your glass pan filled with rolled tortillas you will pour a can of enchilada sauce over them.

Add Toppings

Add the remaining ground beef and sauteed onion mixture to the top of your glass pan full of rolled tortillas. Then add the remaining diced tomatoes, diced onions, and bag of shredded cheese on top of your tortillas.

Cook

Place your glass pan with your filled and covered tortillas in the oven. Cook your tortillas at 350 degrees for approximately 30 minutes. Then remove from the oven and enjoy!
