It is best to prepare this salad a few hours in advance to allow the potatoes to absorb the flavors.
Ingredients

Prep time:  15 mins
Cook time:  15 mins
Total time:  30 mins
  • 2 lbs small new potatoes
  • 4 tablespoons olive oil
  • 2 green onions, finely chopped
  • 2 tablespoons fresh dill, chopped or 1 tbsp dried
  • 2 tablespoons white wine vinegar
  • ½ teaspoon sugar
  • Salt and pepper
  • 2 tablespoons fresh parsley, chopped
 
Instructions
  1. Wash the potatoes but do not peel, put them into a pan, cover with water and boil until just tender.
  2. While the potatoes are cooking, heat the olive oil in a frying pan and cook the green onions and garlic for 2-3 minutes until they have softened a little.
  3. Add the dill and cook gently for a further minute.
  4. Add the wine vinegar and sugar, and stir until the sugar dissolves. Remove from the heat and add a little seasoning.
  5. Drain the potatoes and pour the dressing over them while they are still hot.
