- 2 lbs small new potatoes
- 4 tablespoons olive oil
- 2 green onions, finely chopped
- 2 tablespoons fresh dill, chopped or 1 tbsp dried
- 2 tablespoons white wine vinegar
- ½ teaspoon sugar
- Salt and pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Wash the potatoes but do not peel, put them into a pan, cover with water and boil until just tender.
- While the potatoes are cooking, heat the olive oil in a frying pan and cook the green onions and garlic for 2-3 minutes until they have softened a little.
- Add the dill and cook gently for a further minute.
- Add the wine vinegar and sugar, and stir until the sugar dissolves. Remove from the heat and add a little seasoning.
- Drain the potatoes and pour the dressing over them while they are still hot.
