Barbecued Mini Pizzas!

This is a super fast, super easy, and super fun lunch to make using leftovers and staple ingredients.

These pizzas are also a great way to get kids helping in the kitchen to make their own mini pizzas!

Ingredients

Get together:

  • 6 mini tortillas (or pita bread or mini pizza doughs)
  • Pasta or pizza sauce
  • Grilled peppers
  • Cheese (mozzarella, cheddar and/or parmesan)
  • Cracked pepper
  • Olive oil

Prime and Prep

Get 6 tortillas out and coat with a drizzle of olive oil. The oil seals the dough prevents them from getting soggy from the sauce.

Add a small spoonful of tomato sauce to the tortillas.

Chop, Grate and Make

Cut up the peppers into thin strips. Grate the cheese(s).

Add cheese to the tortillas and then the peppers.

Note: you can add anything you'd like to your pizza. Leftover peppers worked well here (nice and simple). Fresh or cooked vegetables, leftovers, meats, various cheeses...etc., can all be used! Get creative. Especially for kids, it's nice to have options of what to put on their pizzas.

Barbecue the Pizzas

Add the pizzas to the BBQ on medium heat for about 5-7 minutes. Keep checking underneath to make sure it's not burning. A little browning/crustiness on the edges is what we are after.

Once the cheese is melted and the edges are golden, remove from the BBQ and onto a plate to serve.

Garnish with cracked pepper, chili flakes or fresh herbs.
