Supplies
8 inch / 20 cm spring form pan
food processor or a bag + rolling pin
230 g plain biscuits, cookies or graham crackers
150 g melted butter
1 can dulce de leche (caramelized or boiled condensed milk) (397 g)
2 big bananas
300 ml whipping cream or 1 1/4 cup
1/2 tsp vanilla flavored instant coffee
1 pack cream stabilizer 15g
1/2 cup or 90 g dark chocolate for decoration (optional)
1 tbsp crushed hazelnuts (optional)
Banoffee Pie Base
Combine the crushed biscuits or cookies with melted butter.
Press to the bottom and sides of the spring form pan or pie pan.
Use food processor to crush the cookies. Alternatively, put cookies in a sealed bag and crush with the rolling pin.
Let the base set in the fridge for 1 hour.
Pie Filling
Fill the bottom of the pie with caramelized condensed milk or Dulce de Leche.
Place the slices of banana on top.
Whip the cream with stabilizer and coffee, using electric mixer until stiff peaks. You can add a little bit sugar here, but Dulce de Leche and banana together are very sweet !
Put the whipped cream on top of the pie.
Put the pie in the fridge, while making decoration.
Decorate the Pie
Melt 3/4 of the chocolate on a double boiler (a pot with simmering water and a heat-proof bowl placed on top).
Make sure the top bowl doesn’t touch the water!
When it is almost melted, remove the bowl from heat and add remaining chocolate. Stir until melted and cooled.
This process is called tempering, you can see our instructable on how to temper chocolate.
Pour chocolate on the tray or plate, layered with parchment paper and let it cool completely. Cut different shapes and leave aside.
Alternatively, just grate some chocolate on top of the pie!
Cut the hazelnuts in half.
Decorate the Pie
Insert the chocolate decorations in the pie and sprinkle crushed hazelnuts.
Cut the banoffee pie and enjoy!
