In Haiti a common breakfast in the countryside is spicy Haitian Eggs and plantains (sweet). It is easy and fast to make it only takes 15 min to get everything ready to eat.

Supplies

4 large eggs

2 Plantains (Semi ripe)

some Diced Onions Diced Green Peppers

1 tomato

some broccoli

1 tsp of salt

half a maggi

In a 1 quart pot add 2 cups of water, 1 tsp Salt and bring to boil.

Cut the small ends of the plantains, cut it in half, and add it to the boiling water with the peel for about 15 min. *Note if you boil it without peel you may get mush.

Crack the eggs open in a bowl. Add 1 tsp of salt, half a maggi, the dice onions and pepper and mix thoroughly.

Heat up the frying pan for about 2 min and add the eggs and scramble for about 2-3 min I used some Mazola corn oil depending on how you eat your eggs you might do it differently.

Take the hot water out of the pan and add cold water let it sit for 2-3 min and take peel off the plantains after you can put it aside.

Go ahead and get the tomato and broccoli ready to plate the food.

After you plate the food you can go ahead and serve it while it's hot.
