Banana Nut and Fruit Bread
I have just served this up to my parents with a cup of tea, and they loved it, so hopefully you will too.
This is the best way i know to use up those yucky brown bananas that you didnt get round to eating, and transforms them into nom nom treats.

Step 1
1 - Preheat your oven to 180C
2 - Sift 8 oz of Self Rising Flour into a bowl, add 4oz butter, 5oz caster sugar and blend together ideally with an electric hand whisk
3 - In a separate bowl, peal and mash with a fork 1lb of brown bananas (browner the better as they are sweeter)
4 - add the banana to the bowl of flour, butter and sugar, and mix well together

Step 2
Fold in 6oz of your choice of nuts and dried fruit into the mix.
Tip - You can pretty much add anything to this mix, i chose a selection of almonds, macadamia nuts, and some dried fruit i had left over from previous baking sessions. If you prefere just add nuts / fruit. Experiement to see what works best for you, thats half the fun :D

Step 3
- Spoon the mixture into a lined and greased 1kg (2 lb) loaf tin, smooth down with a spoon to ensure an even surface.
- Bake for 90 minutes
- Bake for 90 minutes
Step 4
- Once your bread has been in the oven for 90minutes it should be golden brown in appearance and well risen (as long as you kept the oven door closed), remove from the oven.
- Cool on a wire rack, remove from tin after 15mintues.
- Slice and serve warm, or keep in an air tight box and consume within 4 days.
