Banana Sponge Cake

This version of the Banana cake is super healthy. I was wonder struck at the the texture. The banana has actually given that spongy texture. It is a must try out recipe. The kids will love it. My nephew keeps asking me to make this cake time to time.

I got a 1/2 Kg cake

Preparation time - 15 minutes

Ingredients:

Flour - 3/4 cup

Banana - 2 big sized (I used moris yellow variety like the ones in the pics)

Vegetable Oil (or) Melted Butter - 1/4 cup

Granulated Sugar - 1/4 cup (Little higher or lower according to the sweetness of the banana)

Baking powder - 1/2 tsp

Baking soda - 1/2 tsp

Vanilla essence - 1/2 tsp

Walnut - 2 tbsp finely chopped

Oven

Beater/Kitchen Aid

Mash Banana

Peel the skin of the banana and mash them well. Grind them till they form a paste.

Wet Ingredients

Add oil, vanilla essence and mix well. Fold in sugar and mix well until sugar completely dissolves.

Dry Ingredients

Add sieved maida , baking powder-soda mixture and mix well until a creamy mixture is formed.

Add the chopped walnuts.

Bake

Preheat oven for 10 minutes. Bake the cake at 180 degree Celsius for 25 minutes. Keep checking in between. I must tell, the cake was very spongy.
