Banana Cream Pie
If you want to have a recipe to make a delicious banana cream pie you should make this! Every time I make this pie there is none left over... You can even make it gluten free by just changing the flour from regular all-purpose flour to gluten free all-purpose flour.
Supplies
- Pie crust ingredients- gluten-free flour or regular all-purpose flour-5 oz, shortening- 3oz, brown sugar-0.2083 ozs, cold water-1.66 oz, salt- 0.33 oz
- Filling ingredients-White sugar-5.3 oz, flour-4 oz, salt-¼ tsp, milk-16 oz, egg yolks-3 egg yolks, vanilla-0.33 0z, butter-4 oz, banana-1
- Whipped cream ingredients-Whipping cream- large carton, sugar-1/4 cup, vanilla-1/2 tsp,

- Measure flour and shortening into a bowl together. Using your hands, combine until you resemble the shape and size of peas. Mix in a separate bowl the water, salt, and sugar. Pour into flour mixture and mix until just combined. Wrap it in plastic wrap and let it rest for at least an hour before using.
- Roll out the dough so that it’s thin enough that you can see the color of the counter through the dough. Spray the tin with a light coat of non-stick spray and carefully put the rolled out dough into the tin. Fit the dough tightly around the tin and cut off the extra dough.
- Bake the shell until golden brown and moves around-doesn’t stick if you shake the tin a little.
- While the shell bakes combine the sugar, flour, and salt together in a bowl that you can get hot and set aside.
- Separate the egg yolks and egg whites, and whisk the yolks and the vanilla. Scald the milk with the butter (bring to a boil), quickly add the hot milk to the dry ingredients and whisk until the mixture is lump free.
- Put the mixture over a double boiler- whisking frequently until thick. Temper the egg yolks- slowly add the hot mixture to the eggs mixing as you add the mixture so the eggs don’t scramble, add the tempered egg to the rest of the mixture to make sure the yolks are cooked. Cook for at least another 20 mins.
- Let it set overnight in the fridge or put it in an ice bath and mix it with an electric mixer until it thickens even more.
- Put a large carton of whipping cream in an electric mixer with ¼ cup of sugar and a 1/4 tsp of vanilla. Mix on high with a cloth covering the bowl until it turns into whipped cream.
- Cut a banana into the bottom of the pre-baked pie shell. Pour half of the mix into the pie shell, put more banana and put the rest of mix into pie shell and top it with the whipped cream. Put a couple of banana slices on top of the pie
- Cut the pie into 12 pieces, serve, and enjoy!
