Banana Brownies

I love brownies, I love all the chocolate flavour, especially when combined with vanilla ice cream.

I believe baking brownies is similar to cooking steak. My favourite brownies are medium rare. With moist and soft centres, they just melt in your mouth.

But if you have a problem eating raw eggs, maybe your are allergic to raw eggs like my daughter, or it's just disgusting to you, you'll love this version.

By adding bananas the brownies have a nice flavour, moistness, great texture, and you can eat them as raw as you like.

And all the cocolate flavour comes from cocoa powder, which makes this brownies rich, dark and just pefect.

Gather Your Ingredients

1 1/2 cup sugar

2/3 cup butter or shortening

2 bananas

2 tsp vanilla extract

1 tsp salt

2/3 cup cocoa powder

1/2 cup all purpose flour

Mix

It´s going to be a soft batter, so you can use the mixer for this step or mix it by hand.

Mash the bananas. Add the shortening and sugar. Mix until well combined.

Add vanilla. And salt.

If you used a mixer for the previous step, now you need to mix it by hand, or the batter will get over mixed and your brownies will get a different texture.

Add flour and cocoa and fold until the batter is thick and smooth. Even when mixing by hand be careful to not over mix.

Pour mix into a well greased pan and spread evenly.

Take a spoonful of raw batter and enjoy... it doesn´t have egg!

Bake at 180C for 20 min. for fudge-like brownies. If you poke the centre with a toothpick it will come out dirty, so just take a look at the edges and move your pan, the centre doesn't have to wiggle.

Finally here is a funny story: I´m a stronger believer that brownies should be in the shape of a rectangle, so when I saw I forgot my squared pan at a friend´s house, and I already had the batter ready, I almost hyperventilate. So I took my pie pan and decided to somehow cut them in a rectangle shape once baked. I know they´re not the perfect shape, but it´s way better than pizza slice shaped brownies.

Does this makes me a little freaky? Please tell me I´m not alone!
