Baked Zucchini Coins

These oven baked zucchini coins are a yummy (and healthy) summer snack!

At our house they disappear almost immediately!

Ingredients

For this recipe you need:

  • 1 zucchini
  • 1 egg white
  • 1 tablespoon of parmesan cheese
  • 2 tablespoons of cornmeal
  • 2 tablespoons of flour
  • salt

Mix, Coat and Bake

Preheat the oven to 475°F.

Slice the zucchini into thin coins.

Mix the dry ingredients (parmesan, cornmeal, flour and salt).

Lightly beat the egg white.

Dip the zucchini into the egg and then coat each piece in the cornmeal mixture. If you're in a hurry, you can throw the dry ingredients in a ziplock bag, add the egg-dipped zucchini and shake to coat everything.

Place the zucchini coins on a non-stick baking sheet or use a silicone baking mat to make clean-up easier.

Bake for 7 minutes then flip over the zucchini pieces and bake for an additional 7 minutes or until they are golden and crispy.
