Baked Cajun Salmon With Bacon Wrapped Scallops and Potatoes

Create this wonderful seafood dish with Salmon, Scallops and Potatoes. This meal goes great salads and white wine pairings (riesling varieties are highly recommended)

We will start by placing the potatoes into the oven and add the salmon about halfway through the cooking time. Preheat your oven to 400 degrees fahrenheit.

Prep Time: 15 Minutes
Cook Time: 30 Minutes
Cooks for: 3-4

Supplies

1 12oz. Salmon Filet
1/2 Lb fresh Scallops
1 package of Sliced Bacon
4 Yukon Potatoes
Olive or Vegetable Oil
2 Tbsp Butter or Maragine
Cajun Seasoning

Cooking Materials

2-Oven safe cooking sheets
1-frying pan
1-Cutting Board
1-Microwave safe bowl

The Potatoes

Using the cutting board, cut the potatoes into slices approximately 1mm thick. Place potato slices on an over safe cooking sheet and coat with 2 tbsp. of vegetable or olive oil. Set over temperature to 350 degree fahrenheit.

Place the cooking sheet in the oven and set timer for approximately 30 minutes.

The Salmon

Take 2 Tbsps of butter and place in microwave safe bowl. Microwave butter to melt for approximately 25 seconds.

Place a sheet of tinfoil on an over safe cooking sheet and fold all sides of the sheet up (This will help capture the butter). Apply a layer of oil to the base of the sheet to prevent the salmon from sticking to the foil during the cooking.

Place Salmon filet on cooking sheet and pour a layer of butter over the top. Sprinkle Cajun seasoning across filet and place in the oven on a separate rack from the potatoes for 10-15 minutes.

The Scallops

While salmon and potatoes cook you can cook the scallops.

Remove the scallops from their wrap and dab off the moisture with a paper towel. Place the scallops on a plate and wrap each scallop in bacon. (toothpicks are recommended to secure bacon to each scallop).

Place 1 Tbsp of vegetable or olive oil in a frying pan and turn stove top to medium heat. Once oil begins to sizzle place wrapped scallops on the frying pan. Using tongs turn the scallops and bacon until they have been browned on all sides.

Completion

Once the scallops are cooked, remove the frying pan from heat. Remove cooking sheets from the oven and allow to cool for 2-3 min.
Place all items on a dish of your choice and enjoy!
