Bacon (and/or Jalapeno) Cheese Crisps
Yesterday, I came across this recipe on Facebook, (https://buttoni.wordpress.com/2015/03/08/jack-snacks/). They looked really good, even better if you switch the jalapeno’s with bacon. So this is a record of how I came up with a variation on this theme.
Try #1
- Ingredients
- ½ lb. grated Monterey jack cheese
- Cooked bacon pieces
- Jalapeno slices (if they are pickled- they need to be drained until as dry as possible for it they are moist they will prevent the cheese from crisping up)
- Supplies:
- parchment paper
- baking sheet
- grater
- bowl
- measuring spoons
- Oven
- Paper towels
- Cooling rack
Preheat the oven to 350°F. So I started out by grating the jack cheese,
and then cooking the bacon
and letting it drain on a folded paper towels.
Put a sheet of parchment paper on the baking sheet
and then measure out a heaping tablespoon of cheese on the paper.
Add a piece of bacon (or jalapeno) to the top and put the sheet in the oven for 12 minutes.
Remove from the oven place on the cooling rack and let cool completely.
Looks good.
Appears to be nice and crisp.
Now for the taste test; what a disappointment. It was nice and crisp but they were too large and flavorless, except for the bite that got the bacon or jalapeno.Time to think: Crispy was good, so how to add more flavor.
Try #2
- To the above list add:
- ½ cup of grated medium cheddar cheese
- ½ cup crisp bacon, chopped
Add the cheddar cheese to the Monterey jack cheese. Mix. Add the chopped crisp bacon to the cheese, and mix some more.
On a sheet of parchment paper, scoop a scant 1 tablespoon of the cheese bacon mixture.
Give them room to spread. Again bake for 12 minutes.
Let cool completely once it has been removed from the oven.
Now, they look really good. Nice and crisp and lots of that wonderful bacon.
Now to taste; Oh my word these are good. Yummmmmmmmm.
Try #3
- To the above list add;
- ¼ cup dry jalapeno, chopped
Repeat Try #2 only add the chopped jalapeno after the bacon then mix.
On parchment paper, scoop a scant 1 tablespoon of the cheese mixture. Give them room to spread. Again bake for 12 minutes. Let cool completely once it has been removed from the oven.
They look really good.
Nice and crisp and lots of that wonderful bacon and jalapeno.
Now to taste; Oh my word these are good. I like them a lot better with the combo of bacon and jalapeno.
If I were to serve these to friends I would make lots of the bacon alone and a lot of the combination of bacon and jalapenos. Yeah that works. Enjoy!
