Bacon Strip Pancakes
Words can't describe the taste of these Bacon Strip Pancakes. You're getting the best of both worlds - sweet and salty. We were blown away here at Food Steez when we cooked this dish. It's the perfect breakfast recipe but be careful - if you cook it for family & friends they might be coming back to your house every morning for some home cooking!
Ingredients:
8 bacon strips
1 Small Bag Semi-Sweet Chocolate Morsels (optional)
Pancake Mix:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg 3 tablespoons butter, melted
Directions
Start with your bacon. Place foil on a shallow baking sheet for an easy bacon grease cleanup. Then place a metal cooling rack on your shallow baking sheet.Using a metal cooling rack is optional but we recommend using it as it will cook the bacon consistently on both sides and the strips wont be as oily. If you don't have a cooling rack, place your bacon directly on the foil. Heat the oven to 400 degrees. Place your bacon in the oven and let it cook for 12-17 minutes or until golden brown. Place aside.
Next, you'll want to start your pancakes. In a large bowl, sift together the baking powder, flower, sugar and salt. Then add your milk, egg and melted butter. Mix well. Using cooking spray or butter, oil your griddle. Place your pancake mix into a measuring cup and pour 1-2 bacon sized pancake strips at a time. After pouring your mix onto the griddle, place a bacon strip on top of your pancakes while the mix is still uncooked. Cover the bacon strip with more pancake mix - be sure not to pour too much! Cook both sides until golden brown. Garnish with Semi-Sweet Chocolate Morsels and bacon flakes.
