Living a low carb life style can be challenging but very rewarding with weight loss and reduced appetite. One thing that suffers is the simple pleasure of having a sandwich. Not anymore!

Queso Blanco or other frying cheese

Step 1: Slice the Queso
After removing the queso from its package and poking it with your finger (optional step) slice as many pieces as you want to fry but no fewer than 2.
Step 2: BACON!
For this step you will need to fry up a few pieces of your favorite bacon. I typically put 3-4 slices of bacon on each sandwich.
After bacon is cooked to your liking move it to a paper towel lined plate and discard grease into the proper receptacle aka the old coffee can under the sink.
Wipe the pan clean with a fresh paper towel. Be careful - it's effin hot!

Step 2: Queso
Place the frying pan back on the stove and reduce the heat to medium low. Melt a few pats of butter slowly. Add a dash of olive oil for some European flair. Once the butter is melted place 2 or more slices of Queso Blanco in the pan.
If your pan it too hot the cheese will brown too quickly. You want a nice slow browning because this gives the up side of the cheese time to soften. The queso will NOT become gooey like other cheeses. Yes, this freaks me out too.

Step 4: the Marriage of Bacon and Queso
Lift up the edge of the cheese and check for doneness. If the color is to your liking it's time for the bacon.
Add the bacon to one piece of the queso and flip the other piece unto the bacon piece. GIve it a lite mash with your spatula. Cook for 30 more seconds.
Move sandwich from pan unto clean paper towels to soak up any excess grease.
Now, eat slowly and savor each bite. You may also dip your unholy creation into your favorite condiment for added enjoyment.
