Bacon & Eggs (Bacon Bourbon Cookies)
Pretend you're Ron Swanson and eat all the bacon and eggs you can! If you don't want to cover the cookies with chocolate you can make some small "eggs" for the side.
INGREDIENTS
Bacon Bourbon Cookies (yields 15 cookies)
-1/2 cup butter (1 stick), softened
-3/4 cup sugar
-1 egg
-1 tablespoon bourbon
-1 1/4 cup flour
-1/2 teaspoon salt
-1/2 teaspoon baking soda
-2 tablespoons chopped bacon pieces, crispy
White chocolate "egg" (for 5 cookies)
-8 oz white chocolate/white baking bark,melted
-5 lemon drop candies (or any other round yellow candy)
-1/4 teaspoon white sugar and black crystal sprinkles
"Bacon" (4 bacon pieces)
-8 pieces of tootsie rolls
-8 pieces or caramel

Make Bacon Bourbon Cookies
Start by making the Bacon Bourbon Cookies
Bacon Bourbon Cookies (yields 15 cookies)
-1/2 cup butter (1 stick), softened
-3/4 cup sugar
-1 egg
-1 tablespoon bourbon
-1 1/4 cup flour
-1/2 teaspoon salt
-1/2 teaspoon baking soda
-2 tablespoons chopped bacon pieces, crispy
Preheat oven to 350 degrees. Cream together butter and sugar until fluffy. Add egg and mix, then add in bourbon. Mix well. (At this point you could also add in 1/2 teaspoon of maple extract if you'd like to). In a separate bowl mix together the dry ingredients: flour, salt, and baking soda. Add half of the dry ingredients to the wet ingredients, mix well, and then add the remaining dry ingredients. Fold in the bacon pieces. Scoop the dough using a tablespoon, roll into ball, and place on a parchment lined sheet pan. Place pan in freezer for 10 minutes and then put put directly into the oven. Bake for about 12 minutes.

While the cookies bake, make the candy bacon pieces.

Each bacon piece is made of two pieces of tootsie rolls and two pieces of caramel. Take a caramel piece and pinch and stretch it until it is a long thin piece. Repeat with the tootsie rolls and remaining caramel. Squish the pieces together, alternating. Pinch and crimp it until it resembles bacon. Repeat with the remaining candies for the next three pieces of bacon.

Place cookies on wax paper. Melt chocolate. Scoop a tablespoon of chocolate on cookie and use bottom of spoon to evenly spread around the cookie. Scoop another tablespoon of chocolate and spread around until it resembles an egg. Place yellow candy to the side of cookie in the chocolate. Sprinkle on the white and black sugar/sprinkles.
