Bacon Bourbon Rice Krispy Treats

Rice Krispy treats are pretty dang good, but add some BACON and bourbon to them, and you've got yourself something AWESOME! Your tastebuds (and your friends) will thank you for making these. Best part? They're super easy!

What You Will Need

For the Rice Krispy Treats:

I just followed the basic instructions on the Rice Krispies box and then added the good stuff ;)

  • 3 Tbs butter
  • 1 package (10 oz) marshmallows
  • 6 cups Rice Krispies
  • 3 1/2 Tbs Bourbon
  • 20 oz cooked bacon, chopped (save some for garnish)

I have included how I cooked the bacon in this Instructable, as I was using raw bacon. But to cut time, you can always buy the already cooked bacon.

For the Bourbon Glaze:

  • 1 Tbs Bourbon
  • 1/4 cup powdered sugar
  • A tiny pinch of salt (it's amazing how this tiny pinch makes the glaze PERFECT!)

Cooking the Bacon

For many, cooking bacon is a messy process, and is therefore avoided. But I find that cooking bacon in the oven not only saves time, but it also saves you from the splatter of bacon grease on your otherwise clean clothing.

Set the oven to 400ºF. Cover 2 baking sheets with foil (makes for easy clean up later) and put a metal rack over it so that the bacon can cook on both sides and not sit in its own grease. Make sure the bacon strips do not touch each other.

Put the bacon in the oven on two middle racks for about 15-20 min. Check on it about halfway through and make sure that all the strips are cooking evenly. I had to switch the baking sheets halfway through so that the bacon cooked evenly on both sheets.

When the bacon is done, it should look golden brown and mostly crispy. I blotted all the bacon with a paper towel after they came out of the oven to get rid of any extra grease.

Prep Your Pan

Since you will just be sitting in your kitchen waiting (patiently) for your bacon to cook, you might as well prepare the pan.

In order for your sticky treats to not stick to the pan you put them in, make a sling with parchment paper in the pan (as pictured above). Spray the sling with a little non-stick spray to ensure your treats will not stick.

Now back to watching your bacon cook!

Chop the Bacon

There are many ways to chop bacon, and many sizes you could chop it into. I chose to really coarsely chop it so you really get those hits of bacon when you are eating the final product. I think that worked out really well. But if you want to chop it finer, I'm sure it would still be just as delicious. After all, it's bacon!

Butter and Marshmallows and Bourbon, OH MY!

Time for the fun part! Add the butter to a pan that will be able to hold 6 cups of rice krispies. I used a wok, and that worked perfectly.

Let the butter completely melt and then add the bourbon and the marshmallows.

You will have to stir this mixture for about 5 to 10 minutes until there are no lumps left.

Add the BACON!

So hopefully you have not been snacking on the bacon, and there is still some left to add to your kick-ass rice Krispy Treats (yes, I know you've eaten a few pieces, don't lie).

Add the bacon to the smooth marshmallow mixture and stir until all the bacon pieces are incorporated.

Add the Rice Krispies

Turn the the burner off and add the Rice Krispies to your scrumptious bacon, marshmallow, bourbon mixture. This is going to be sticky so prepare yourself. I used a wooden spoon to combine everything and it worked pretty well.

Molding the Rice Krispy Treats

Pour the Rice Krispy mixture into the pan with the sling. I used a oiled piece of wax paper to press the mixture down into the pan. Press until the mixture is evenly distributed around the pan.

Bourbon Glaze

Combine 1 Tbs Bourbon, 1/4 cup powdered sugar, and a tiny pinch of salt in a bowl until completely combined. You may have to add a little more sugar if the glaze is too thin.

Finishing Touches

Drizzle the bourbon glaze over the set Rice Krispy Treats. Then sprinkle the remaining pieces of bacon over the top. Let cool completely in the pan.

Lift the sling carefully out of the pan and cut your treats into squares.

Now make sure you enjoy a few of these before you let your friends know that you made them. I took a batch of these to work, and I'm pretty sure they didn't survive 2 hours.
