Bacon, Asparagus, Tomatoes, and Cheese Quiche Cupcakes
Here is a quick and easy breakfast bake recipe. It only takes 20 minutes of bake time.
Ingredients Needed:
x6 Eggs ( possibley 2 more since as you can see I'm short one cupcake on the pan)
1 cup of Milk
5-7 spears of asparagus (You can use spinach too)
4-5 pieces of cooked crispy Bacon
1 tomato (I used a large cherry tomato. You can add more if you'd like. I only used one because I don't want the tomato to overpower the other ingredients.
Choose your own shredded cheese
Pepper (If you like) No salt, because that's what bacon is for.
Kitchen Untensils needed:
Medium Bowl
Mixing Spoon/ Whisk (I used a Spoon)
A pan for cooking the bacon
Cupcake pan
Optional: Pam Spray/Paper Cupcake cups (Cupcakes maybe hard to pull out, I suggest just using Pam on the pan.)
Step 1:
In a medium bowl add the eggs and milk and mix it well. ( Add the milk for fluffy cupcakes) Chop the asparagus as small as you can. Chop the tomato in medium pieces. Add the asparagus and tomatoes in with the mixed eggs and milk. Set aside.
Set the oven to 400 degrees.
Step 2: BACON!!!!
Put the stove on medium heat. Go ahead and just place that bacon on the pan. Don't need oil or anything, that's what bacon grease is for. Make sure to make that bacon crispy. Once that's done, crumble the bacon into the egg mix.
Step 3: Baking Time
Put some cheese in the baking cups or pan cups. Pour the mix in the baking cups or pan cups at half full. If more cheese is desired, put more cheese on top of the cups.
Once the oven is set, go ahead put the pan in the oven and set a timer for 15-20 min depending on how hot your oven gets. My oven gets pretty hot, so I have to shave a few minutes or so on the actual directions time.
Once baking is done, eat and enjoy!!!
