We had so many cherry tomatoes that came in this year that we didn't know what to do with them.  We gave a bunch away and with the rest we had a large bowl sitting on the counter for the kids to eat as snacks.  Since we were already eating cherry tomatoes with almost all our meals we decided to come up with a new way to present it.  This is what my husband and I came up with.

Getting the Ingredients Together.

About 3 dozen Cherry Tomatoes
1 pound Bacon
1 small/medium Onion
1 stalk Celery
20 leaves of Spinach
3/4 cup Miracle Whip (or what ever salad dressing you prefer)
1 teaspoon Olive Oil
1/2 teaspoon fresh Parsley
3 tablespoons Grated Parmesan Cheese

Let's Prepare the Ingredients.

First, start out by cooking the bacon.  After bacon is cooked, put it on a plate covered with paper towels.  Take some extra paper towel and pat the top of bacon to try to get off as much grease as you can.  Then, chop up the bacon, put into a bowl and set aside.

Next, dice the onion and celery.  Put into a small skillet and saute' in 1 tablespoon of olive oil for about 10 minutes on medium heat.

Then, dice the leaves of spinach.

Finally, to prepare the tomatoes the first step is to cut off the very top.  Be sure not to cut off too much.  then take a small spoon and carefully take out the seeds and insides.  Discard them when done.  Once that is done then place the tomato upside down on some paper towel to let them drain.

Combining Ingredients.

First, add the sauteed celery and onions in the bowl with bacon and mix together.  Then, add the parsley, parmesan cheese and spinach leaves.  Mix well.  Next, add the mayo and mix it all together.


Stuffing the Tomatoes.

The final step is to stuff the tomatoes.  All you do is take a half spoonful of bacon mixture and spoon into tomatoes.  Careful not to over stuff the tomatoes.  Then arrange them on a plate to display for company, as appetizers, or with a favorite side.

Place in refrigerator for 1 to 2 hours before eating.
