BIG Chocolate Sandwich Cookie - Cake

Chocolate sandwich cookies are small and they are one of my husband's favorite snacks. He also loves a chocolate cake that is big enough to feed a crowd! Several years ago I bought pans to make a cake in the shape of a sandwich cookie but I have never used them. I thought this Big vs. Small Challenge would be the perfect time to try the pans out! Here is how to make a cake that looks like a BIG chocolate sandwich cookie!

Supplies Needed

2 9-inch round cookie shaped cake pans (or 9-inch round cake pans)

paper towel

mixer with bowl

rubber scraper

wire rack

sharp knife

butter knife

cake stand

measuring cups - 1 cup, 1/2 cup, 1/4 cup

teaspoon measure

Ingredients for the Cake

shortening

all-purpose flour

1 (15.25-ounce) devil's food cake mix

1 cup water

1/2 cup canola oil

3 large eggs

Grease the Pans

Using a paper towel, generously rub shortening over the 2 cake pans, making sure to coat all of the nooks and crannies.

Flour the Pans

Sprinkle flour over the bottoms of the pans. Shake and tap the pans to cover all of the shortening with flour. Note: You can make a flour shaker out of a Parmesan cheese container.

Prepare the Batter

Preheat oven to 350 degrees F.

Add the cake mix to the bowl of a stand mixer. Now add water, canola oil and eggs. Blend on low speed. Once blended, beat on medium speed for 2 minutes.

Pour the Batter

Using a rubber scraper, pour 1/2 of the batter into each prepared pan. Tap each pan on the counter to remover air bubbles.

Time to Bake

Place the cake pans in the preheated 350 degree oven. Bake for 25 minutes or until a toothpick inserted in the center comes out clean and the edges pull away from the pan.

Cool cakes in the pans on a wire rack for 15 minutes.

Cool the Cakes

Carefully remove the cakes from the pans and place on wire rack to cool completely.

Prepare the Layers

Using a sharp knife, cut across and remove a layer from the rounded top of each cake. This will make the cakes sit flat. Place one cake layer, cut-side-up, on your cake stand or cake plate forming the bottom of your cake.

Ingredients for the Cream Filling

1/2 cup softened butter

2 teaspoons vanilla extract

1/4 cup heavy cream

3 1/2 cups confectioners' sugar

Prepare the Cream Filling

Add softened butter into your stand mixer bowl.

Beat butter on medium speed for 3 minutes until fluffy.

Add Remaining Ingredients

Add vanilla and cream to butter, continuing to beat.

Add one cup of the confectioners' sugar at a time, beating after each addition until completely blended.

Add the Filling

Scoop the cream filling onto the bottom layer of the cake. Spread evenly to the edges.

Add the Top

Carefully place the top of the cake over the filling.

Cover and refrigerate the cake until ready to serve. Your family or your guests will love being served a cake that looks just like a BIG chocolate sandwich cookie! I hope you try making this. It is so fun to serve. The cake is fudgy and the filling is creamy, just like the chocolate sandwich cookie!!! You can serve some chocolate sandwich cookies with your cake so everyone can enjoy eating something big with something small that look alike!
