BBQ Whole Chicken Skillet

To begin you will need

1. one whole Chicken.

2. 2Tbs. of yellow mustard.

3. 3Tbs. of Chicken Rub. I use Pappy's choice Seasoning.

You'll need 1. 8inch cast iron skillet. I'm using the cast iron skillet that came with my weber gas grill.

To begin you will need

A Large bowl.

And a cutting board.

Prep

1.Begin by allowing the chicken to come up to room temperature.

2.Then remove from any packaging and rinse the chicken. allow most of the water to drain of but do not dry with a towel. the added water will carry the seasonings farther into the chicken and help to keep moisture in during the cooking process.

3.Squeeze 2Tbs of mustard on to the chicken, and thoroughly rub mustard all over the chicken. around legs, wings, back and chest.

4. Apply 3Tbs of Rub over the chicken, gently shake and spread rub over the entire chicken. Again Rub onto all areas of the chicken.

5. Place your chicken BREAST SIDE DOWN in the center of your cast iron Skillet.

6. Cover your chicken with a paper towel, keep your chicken out at room temperature while the grill is warming up.

6. Ignite your grill and bring your temperature up to 400degrees.

7. place your chicken that's on the skillet in the center of your grill. Turn off the Center burner so not to have direct heat under the skillet. If you happen to be using a Kettle grill, still place your chicken in the center of the grill, just place your coals toward the perimeter of the kettle. Hot, but indirect.

8. I Put a whole onion and potatoes on at this time on the top rack.

9. Cook your meal for 50 minutes at 400 degrees I like an internal temperature of 170 but no less then 165 degrees.

Chicken for Dinner

10. Remove from the grill and the skillet. place on a cutting board. let it rest for at least 5 min.

11. Serve with your grilled onion, potatoes and Salad. I enjoy a nice beer with this meal, were as my Wife enjoys a glass of raspberry lemonade.
