BBQ Spam Burnt Ends

Bar-B-Que!!! Nothing beats it. But what if you are on a budget. Look no further than Spam. Sure it's not pulled pork slow smoked all day, but it is affordable, easy, waaaay quicker and tasty.

Side note... This can be modified to do in the oven or on the stove. I highly recommend Charcoal or Pellet Grill. I am a huge fan of BBQ so I did it on my Weber Kettle charcoal grill.

Supplies

BBQ Grill (Charcoal, Pellet, Gas or Electric), Wood Chunks for Smoke (Optional), Spam (enough to feed your crew), BBQ Rub (I used Kosmos Killer Honey Bee), BBQ Sauce, Apple Juice, Disposable Aluminum Pan

Getting Started

Open your can(s) of Spam. Cube into squares approximately 1/2". Sprinkle generously with rub or spices. Unlike most meats, Spam doesn't require very much or any sauce to make the rub stick. I did use some BBQ sauce as well as the rub, but this is not completely necessary. As you will see, the rub and sauce give the spam a nice crispy coating once cooked.

Time to Grill

Set your coals for indirect heat. If you are using propane grill, ignite burners and put the meat on the opposite end. For any other heat source, I would recommend as indirect as possible. Arrange the meat so they aren't touching each other. I also added a couple pieces of apple wood. This is not necessary but I was trying to add some smoke to it.

Let Them Go...

I smoked / grilled them indirectly for about one hour. Depending how hot you smoke it, it can take longer.

Pan and Sauce

After about an hour, put them in a pan and add BBQ Sauce. As they cook, the sauce will get thicker and "dry out" a bit. If they are getting too dry, add more sauce and/or apple juice. Give them a good stir and let them go.

It's time to enjoy. These were amazing!!! Way better than I thought they would be for a canned meat. They had a nice crust from the crystalized sugars. With just the right amount of sauce, they were very rich.
