BBQ Chicken and Hawaiian Rolls

Are you a big fan of BBQ? Have I got an easy and flavorful recipe for you!

This recipe uses a crock pot and bread machine. Both of these small appliances do most of the work so you are able to do other things while this is cooking.

Ingredients

BBQ Chicken:

4 or 5 pounds boneless chicken breast tenderloins

28 ounce bottle of Honey BBQ sauce

vegetable oil

salt and pepper

Hawaiian Rolls:

4 cups all purpose flour

1 package yeast

4 ounces butter or margarine

2 tablespoons honey

6 ounces pineapple juice

1/2 cup milk

1 egg

1 tsp salt

Saute Chicken

Sauté chicken on medium heat in vegetable oil for 2 minutes, turn and cook for 2 more minutes. Salt and pepper to taste.

Cook Chicken in Crock Pot

Place chicken in crock pot and cover with BBQ sauce. Turn on high and cook for 1 hour. Turn down to low and cook an additional 4 hours. So very easy!

Making the Dough

In your bread machine, add:

1 large egg

6 ounces pineapple juice

1/2 cup milk

4 ounces butter or margarine

1 teaspoon salt

3 or 4 cups flour

1 package dry yeast

Add all ingredients to bread machine. Start knead cycle and add more flour as needed. I ended up using about 4 cups of flour total. The dough should move freely in the bread machine without sticking to the sides of the bread pan. Allow the dough to go through the kneading cycle of the bread machine.

When the kneading cycle has finished, place the dough onto a floured surface.

Divide the dough into 12 equal parts.

Roll each into a ball and place on a lightly greased cookie sheet. Cover and allow to rise for 1 hour.

Pre-heat oven to 350 degrees and bake for 20 minutes.

Remove from the oven and put butter or margarine on the tops with a paper towel.

Allow to cool for 10 minutes.

There is nothing that compares to the smell of fresh baked bread!

Serve with BBQ chicken, enjoy!
