Cook the Bacon

We choose to heat our bacon up in the oven but if you like pan fried bacon thats ok too.

Start with an empty cake pan. Line the bottom with tinfoil for easy clean up. Then place the bacon roughly 1/2in apart. Turn the oven on to 350-400 degrees Fahrenheit (Depending on your elevation. We went with 375 degrees). Allow the bacon to cook for 10-20 mins to reach maximum crispiness.

Toast the Bread

We used a little bacon fat to grease the bottom of the frying pan to toast the bread. But you can also toast the bread in the oven or the toaster and get the same effect.

First pour some of the bacon grease out of the cake pan, into the frying pan. Turn the burner to a medium to low heat then place in the bread. Allow the bread to cook for 2-5 mins or until golden brown. Once the bread has had time to get a little crispy, add in the cheese.

Now that the bacon has cooked and the bread is toasted, we need to prep our fruits. First cut an avocado in half, remove the seed, and dice the halves for easy spreading. Next take a spoon and scoop out one side of the avocado onto the side of bread without any cheese. Then add a healthy dose of pepper on top of the avocado slice.

After that we need to cut our tomato. We choose slices, but anyway you want to cut the tomato is fine. Place the tomato slices on top of the avocado spread, then add salt. We found some discounted pink Himalayan salt, but regular table salt will do just fine.

After all the fruit prep is done, all that is left is to add the bacon. We laid down 3 strips of bacon each, but you can add more/less depending on your preferences. Ideally you want the cheese to be melted, but we're weird and didn't do that.

Once the bacon is on the sandwich lay the cheesy slice of bread on top, slice the sandwich in half and enjoy.
