Avocado Toast...Untoasted
I like avocados.
I like eggs.
I like bread...but I have a little trouble with toast
So - How was I going to have Avocado Toast?
What if I made - Avocado Toast...Untoasted?
Here's what I needed for two servings:
- One Avocado (I live in Central California. We get some large avocados. If your avocados are...petite...you might want to use two.)
- Two Eggs
- Four slices of Wheat Bread
- Salt-Free Seasoning
- Bacon Crumbles
- Ranch Dressing
- Non-Stick Cooking Spray
- Microwave Oven
The Eggs
Spray two salad-size paper plates with the cooking spray, then crack one egg onto each plate. Stab the yolks two or three times with a fork. Sprinkle with the no-salt seasoning.
Each egg goes into the microwave oven for 45 seconds.
The Avocado
Halve the avocado and remove the pit. Scoop out the pulp and fork-mash it in a bowl. Squeeze a lemon wedge into the bowl, and mix it up. Spread the avocado mixture onto two of the bread slices.
The Assembly
Place one cooked egg atop each avocado-spread slice.
Sprinkle Bacon crumbles over each egg.
Spread a teaspoon of ranch dressing over the remaining bread slices, and use them to top the two avocado-egg-bacon stacks.
Slice them in halves or quarters..
The Finished Product
You now have Avocado Toast...Untoasted, for two. If you only want to make one serving, use one egg, two slices of bread, and one small avocado (or half of a large one, and save the other half for a late-night guacamole snack).
