Avocado Cream Pasta
This Avocado Cream Pasta is SUPER DELICOUS and unbelievably simple to make. Usually, I can finish cookin’ up a batch of this pasta in less than 45 minutes. Seriously, if you like avocados, you have to try this recipe ;)
Ingredients
-1 Bag of Pasta (I used fusilli)
-Seasonings (salt, onion powder to taste)
-Parmesan Cheese (grated)
-Mozzarella Cheese (optional)
-2 Small Avocadoes
-1 tbs garlic
-1 Package of Bacon (I used turkey bacon. It's just as delicious!)
-Heavy Cream (about 1 cup)
-1 Medium Onion
-1 Bell Pepper
-1 Lime
-A handful of cilantro
Boil Pasta
Make sure you do this step first. As you wait for the water to boil, you can do the next step. Follow the instructions on the pasta package. My fusilli pasta takes about 9 minutes to boil.
Chop Vegetables
While you’re waiting for the boiling water, cut the vegetables (one medium onion and one large bell pepper). Chop! Chop!
BACON TIME!
Alright! Now for the bacon!
Plop the bacon in a bowl and start snipping. Cutting it beforehand increases the crunchiness. The reason behind this is that more sides of each bacon bit gets cooked. If you cut it afterwards, only two sides of the bacon are cooked. This is the secret to CRUNCHY BACON!
Pop It in the Skillet
Toss the bacon and vegetables into a skillet and get cookin’! Add a tablespoon of garlic. Cook on medium heat until the bacon is crispy and crunchy, then turn the heat off.
Meanwhile, Make the SAUCE!
The best part of this pasta is by far, the sauce. Cheesy and creamy with a hint of avocado and lime. Yum!
Toss the avocados into a food processor or blender. Add a handful of cilantro and squeeze in the lime juice. Pour in the cream and PULVERIZE!!! Okay, that’s a bit over dramatic. Just blend it to a creamy consistency.
Mix It Together!
Scoop in the sauce and mix it up on low heat. Add onion powder to taste (use more seasonings if you want ;). Add 1/3 cup of mozzeralla cheese (optional). Stir until the cheese and seasonings are full incorporated.
Add the Pasta
Dump in the pasta and mix, mix, mix. It should smell super delicous right about now.
