Authentic Tomato - Salsa & Sauce Recipes
Anything homemade or handmade makes me happy. Both these 'Authentic Tomato - Salsa & Sauce Recipes' are a gift from my mother. She is not only a very loving and caring person, but also a very fantastic cook. All her dishes are very authentic, delicious and mainly simple with easily available ingredients. I devote and thank this instructable to my mother.
There is nothing even close to having homemade food - both in terms of enjoying and sharing it with your family and friends. Try these recipes to please your taste buds and take it to the next level. Tomato Salsa
This is a simple yet authentic recipe with very few ingredients. If you have a barbecue, this would be a great choice. I only have electric stove at home, but it still works pretty good and is tasty too.
I washed 4 medium sized tomatoes and 3 Thailand chillies (you may choose any chillies or JalapeƱo based on your taste). I also took 1/4 cut onion and 1/2 garlic bulb with 5-6 garlic cloves. I kept the cooling stand on the stove. Then placed the tomatoes, onion, garlic and chillies on this cooling rack for roasting (see pic 3). Within 5-10 minutes everything was getting mushy. As you can see the skin of tomatoes, garlic etc was getting black. The inside was cooking well. I then transferred these to a large glass bowl. Let it cool. Peeled the skin of tomatoes and garlic. To my surprise the garlic inside was so soft and well cooked. I used a masher to gently mash the garlic, onion and chillies first. Then added tomatoes to this. All finally was thoroughly mixed. I uniformly mixed it all together. Added salt. Mixed it thoroughly again. The yummy salsa is ready to be bottled. Finally I carefully added it into a glass bottle for storing. This fresh homemade salsa stays good for 1 week when refrigerated.
Tomato Sauce
Every time I make pasta, I use this homemade sauce since all the kids in our family love this sauce. For all the weekend parties, pasta with this tomato sauce is always on me :-) I will share this recipe to add to your list and have fun.
To begin, I washed 4 tomatoes. Cut 3/4 onion. Peeled 5-6 garlic cloves. Soaked 5-6 red pepper in water. Peeled 1 inch ginger and grated the skin. To make my job easier, I have added this cute little chopper in my kitchen. Its a small chopper that's easily mechanically operated. Then I cut onion, ginger and garlic into roughly 1 inch size and added it to the chopper (images 2-7). With a few strokes, all these were cut into small pieces (image 6 & 7). Then, I cut the red pepper into small pieces. This could be added into the chopper (I missed doing that). Then I added 3-4 tbps oil in a cooking pan. Let it heat. When hot, I added the small cut red pepper (image 10). To this I added the cut onions, ginger and garlic (image 11). Stirred it well and let it cook until all these ingredients turned golden (images 12 & 13). After this I cut tomatoes into large pieces and fit it into the chopper. With a few strokes the tomatoes were cut into small pieces (image 15). This tomatoes mixture was then poured into the pan. I mixed and stirred everything in the pan. Let this cook for 10-12 minutes until the sauce was fully cooked with oil separating out (image 20). Turned off the stove. Finally after a while I added 2 spoons of ketchup. Then lastly mixed everything uniformly. When cooled, the sauce was transferred to a clean glass bowl (image 22). This sauce is easily stored for 1 week when refrigerated. I will use this for pasta when the school reopens in the next week.
