Authentic Spices and Mint Flavored Chicken Rice
I have made Authentic spices and mint flavored chicken rice on wood grill for outdoor cooking challenge. When i see the contest the first thing come to my mind is , i need to do something different rather than doing normal usual thing like tandoori or something. I Decided to take this contest very serious and i put so much effort to implement this. With the Final output i am very much satisfied. I will post down below the step by step procedure.
Ingredients
1. First i prepared the ingredients at home in advance, so that it will be easy for me to cook outside. I organized everything
2. I chopped the ginger and garlic and then grounded them into a fine paste
3. Sliced the 2 onions and slits 2 green chilly kept it in a box
4. I bought chicken thighs from shop, so i cut them into small pieces and transfer it to the box
5. And then soaked the 2 cups of Basmati rice in water for about 30 mins and then after 30 mins i drained completely and then put it them into box
6. Whole spices - (cardamon , bay leaf , cinnamon)
7. Tomato - 1
8. Turmeric powder - 1 tsp
9. Chilly powder - 1 tsp
10. Homemade Briyani powder - 2 tsp
11. salt
12. Oil
13. Lemon juice - 3 tsp
14. I have packed all the spices powder to the zip lock cover so that the aroma will not go when it will use and easy to use also.
15. Now all set to go
Marination
1. Now we came to the lake spot for the whole cooking process
2. Its time to marinate the chicken
3. First i have added yogurt - 4 tsp
4. And then added chilly powder - 1 tsp , Turmeric - 1 tsp , Homemade briyani powder - 2 tsp , Rock salt - 1 tsp (I preferably use rock salt instead of fine salt and which is good for health) , Lemon juice - 3 tsp
5. Now mix and coat it well with the chicken
6. Let it rest for 30 mins
Setting Up the Grill
1. Setting up the grill in a beautiful lake side view park in Finland
2. That grill is our very own. we took it to the lake and started making wood fire set up
3. For wood fire, I bought it from a store bio degradable wood it can easily broken into small pieces with hand and we put some paper on it
4. And then add very little amount of kerosene
5. Finally lightened up
Cooking on the Grill Top
1. Place the pan on the grill top
2. Add enough oil
3. Add the whole spices and wait for 2 mins to tempered properly
4. Add onion and green chilly , saute it for 8 mins or until it turns golden brown color
5. Now add Tomato, mix it well and cover it and let it cook until the onion and tomato get mushy
6. Add the marinated chicken , mix it well for 1 mins and again close it with let it cook for 15 mins ( until chicken half cooked)
7. It is very important to close the lid for each step because the aroma will not go and it will give even more taste
8. Its time to add The hero of the dish "Mint" , mix it well and again close it for 5 mins
9. Add the soaked Basmati rice and coat it well with the Masalas
10. Add 3 cups of water for 2 cups of Basmati rice
11. Again cover it with a lid let it cook for 15 mins
Final Output
Heavenly taste mint flavored chicken rice is ready on grill top
If you want it more tangy , then add some lemon juice on top of it
Serve it with onion and Cucumber
