Arkansas Potato Salad
Introduction:
Potato salad is a great side dish for family BBQ or just a family dinner. This recipe comes from my family. I am a really picky eater which is why some steps are optional. You can always make it your own by adding different ingredients to it. This is a classic dish.
Ingredients:
- 5 Russet Potatoes
- 3 Large Eggs
- ½ cup Relish *sweet or dill*
- 3 tablespoon mustard
- 1and 2/3 cup mayonnaise
- *OPTIONAL* ½ yellow onion
Supplies
- 2-quart cooking pot
- sauce pot
- potato peeler
- knife
- tablespoon
- strainer
- large bowl
Prepare the Potatoes
- Rinse potatoes
- Peel potatoes with potato peeler
- Dice potatoes in 1-inch cubes with knife
- Put potatoes in 2-quart cooking pot
Cook the Potatoes
- Add enough water to cover potatoes
- Boil for 15 minutes on medium to high heat (Potatoes should be tender but firm)
Cook the Eggs
- Add water to cover eggs in the sauce pot
- Boil for 5 minutes on medium to high heat
- Set eggs in ice water for 5 minutes after boiling
*OPTIONAL* Add Yellow Onion
- Peel yellow onion
- Dice onion in 1/8-inch cubes with knife
- Add to large bowl
Drain Water From Potatoes and Eggs
- Drain water from potatoes using a strainer and put in large bowl
- Drain water (after ice bath) from eggs and peel the eggs
Dice the Eggs
- Dice egg into ¼ inch cubes with knife
- Add to large bowl
Add Other Ingredients
- Add in ½ cup relish
- Add in 3 tablespoon mustard
- Add in 1and 2/3 cup mayonnaise
- Optional*Add in ½ onion
Stir Together
- Stir all ingredient together using tablespoon
Serve the Potato Salad
- Chill in fridge for 1 hour OR serve warm
- *OPTIONAL* add pickle to garnish
