Arepa De Huevo Colombian Recipe
Hello everyone!
In this Instructable I'm going to teach you how to make a tradicional recipe from the Caribbean coast of my country, Colombia. The arepa de huevo is a popular corn dumpling, often made in the street markets and eaten for breakfast. Every time i go to the beach i have to eat one of these! It's really delicious, hope you like it :)
Supplies
Ingredients:
(These measurements make two Arepas de Huevo)
- Precooked flour for corn cakes (or pre-cooked flour for Mexican's tortillas) - 3/4 cup
- Water - 3/4 cup
- 2 Eggs
- Enough oil to fry
- Pinch of Salt
- Pinch of Pepper
Ps: The second picture is the brand that i used for the precooked corn flour, decided to include it as a reference for you.
Supplies:
- Bowl for mixing
- Cup with spout
- Cooking Pot
- Spatula for oil
- Plastic bag
- Plate
Making the Arepa
- In a bowl mix the corn flour and water.
- Incorporate with your hands for a couple of minutes or until you get a stiff dough.
- Divide the dough in half and make two balls.
- Take one ball and place it on a flat surface covered with a plastic bag (as shown in the picture) Tip: Cut the plastic bag in one side to take the dough out much easier.
- Leave the dough in the bag and the press down with a plate (as shown in the picture).
- If you see any cracks on the edges of the dough, flatten them out and press down again with the plate.
- The dough should be about 5mm thick and it's done!
Tip for the Egg
This step makes it much easier to pour the egg into the dough (aka arepa).
1&2. Place the egg in a cup with spout like shown in picture number one.
3. Add salt and pepper to taste. Set aside.
PS: Also, the idea is not to stir the egg.
Frying the Arepa
- Preheat the oil and fry over medium heat. Tip: Test the oil with a small amount of dough to see if it's hot enough, the dough should start to make bubbles if it's ready.
- With a spatula place the dough inside the oil.
- Let it fry for a couple of minutes, until lightly browned (about 4min), the dough should puff up as shown in the picture.
- Place it on a plate and set it aside for a couple of minutes or until you can grab it with your hand, before the next step.
Adding the Egg and Frying Again
- With a knife make a cut on one side of about 2cm, leaving space to pour the egg.
- Pour egg into the dough aka arepa, then place it in the spatula and fried it again.
- IMPORTANT: Because the egg is raw, you must leave the arepa on the spatula with a slight inclination so that the egg does not come out before cooking inside, this way you prevent the egg from spreading throughout the pot. After 30 to 60 seconds you can leave the arepa cooking without the help of the spatula.
- When browned on one side turn it over, until is totally brown (as shown in the picture), takes about 4 to 5 min. The egg should be totally cooked.
- Remove the arepa to a plate with paper towels so that excess oil is removed.
