Apple Pie Oatmeal Breakfast
Simple, fast, warm and delicious would describe this apple pie oatmeal breakfast. It has all the flavors of a warm apple pie fresh out of the oven but it is also a heart healthy, filling and nutritious breakfast that is not overly sweet. It can also be premade and warmed up in the microwave at time.
Make the Apple Topping

Apple Topping
Ingredients:
1 medium apple – peeled and cubed
1 tablespoon sugar
1 tablepoon vegan butter
1/8 teaspoon ground cinnamon
chopped pecans
Directions:
In a medium sauce pan, melt butter and sugar. Add cubed apples and cook for about 2-3 minutes or until apples start to soften. Cook to desired texture, I like a bit of crunch in the middle of the apple. Remove from heat and set aside.
Cook the Oatmeal
Oatmeal
Ingredients:
1 cup old fashioned oatmeal
1 cup almond milk
1 cup apple cider
Directions:
Remove from heat and set aside. Place milk, apple cider and oatmeal in a medium sauce pan and cook thoroughly for approximately 5 minutes or until oatmeal is tender and becomes thick. Remove from heat and transfer oatmeal into two separate bowls, top with apple topping and chopped pecans.
