Supplies

4 apples
2 eggs
180gr greek yoghurt
120 gr oatmeal
cinnamon (optional)
blueberries (optional)
Toppings
cream cheese, jam, chocolate pudding, honey, nut butter or anything else you prefer (optional)

Peel and cut the apples into pieces (they don't have to be too small).
Then boil them with a little water until they soften. I used a steam cooker but it's not necessary, as you can get exactly the same result with a saucepan with a little water.

When the apples are ready, add them to the blender along with the oats, yoghurt, eggs and cinnamon (if you add it).
Μix them until you get a homogeneous mixture

Heat a non-stick or crepe pan well and add 1-2 tablespoons of the mixture. Add a few blueberries if you want. Wait a few minutes until the pancake comes off the pan and flip it over. Let it sit for another 2-3 minutes until it's browned and comes off easily. Remove from the heat and continue in the same way with the rest of the mixture.

You can eat them plain, or add cream cheese (I used Philadelphia cheese), jam, chocolate, honey, peanut butter or anything else you prefer.
