Apple Cranberry Casserole

A friend gave me this recipe and it has turned out to be one of our favorite during the holidays. What is more festive than cranberries. This is great for that special holiday dinner and is even better the next morning for breakfast.

Ingredients

You can make this with regular flour and oatmeal or if you have someone who is gluten free it works great with the gluten free versions.

Topping

1/2 cup (packed) brown sugar

1 1/2 cup quick oats

1/3 cup all purpose flour

1 cup chopped pecans

1/2 cup (1 stick) melted unsalted butter

Filling

12-ounce packages cranberries chopped

3 cups chopped apples

3/4 cups sugar

½ cup orange juice (I used orange pineapple)

Preparation of Filling

Preheat oven to 350°F. Generously butter 13x9x2-inch glass baking dish.

Now chop the cranberries and apples. I use a food processor but you can also chop by hand.

Combine cranberries, apples, sugar, and orange juice. Pour in baking dish.

Preparation of Topping

Melt your butter. I just melt in the microwave.

Stir together topping ingredients, mix well. It will be thick so you can just spoon it on top of the filling.

Bake crisp until filling bubbles thickly and topping is crisp and deep golden brown, about 40 minutes. Let cool 10 minutes. Great with dinner or for breakfast the next morning. Even good with whipped cream.

Also it freezes great.
