Anda Ghotala is a popular street food in Mumbai, India. Anda means eggs. This dish is full of eggs. It is an amazing dish made with eggs cooked three ways with all flavours and textures. I first tasted this dish at a street food vendor few years back and since then I've been in love with it. Easiest Protein rich breakfast. Made with eggs and pav bhaji masala, this anda ghotala is fascinating, tasty and will be loved by individuals of all ages .I've given the perfect steps with the ingredients and the quantity. Supplies

  1. Eggs.
  2. Butter.
  3. Onions.
  4. Tomatoes.
  5. Green Chilies.
  6. Coriander leaves.
  7. Salt.
  8. Black Pepper Powder.
  9. Turmeric Powder.
  10. Red chili Powder.
  11. Coriander Powder.
  12. Pav Bhaji masala.

Cook Eggs

  1. Boil eggs. (I have taken 4).
  2. Take a small vessel, fill water so the eggs are just dipped.
  3. Add salt as per taste.
  4. Let the water boil in medium flame.
  5. Once it comes to a boil, cover it and let it cook on low flame for 12-15 mins.
  6. We want a hard boiled egg.
  7. After 15 mins, Turn off the flame.
  8. Once it is cool, peel it off.

Chop Chop

  1. Till the eggs are boiling, Prep up.
  2. Finely chop one small onion.
  3. Finely chop one small tomato and 2 green chilies.
  4. Lastly, finely chop some fresh coriander leaves.

Prep Done.

Light Up the Flame

Lets make Anda Ghotala now!

  1. Take a pan.
  2. Heat it.
  3. Add 3-4 tablespoons of butter.
  4. Let it melt completely.

Sauté Onions

  1. Once the butter is fully melted, Add the chopped onions.
  2. Saute them till they're nice golden. Caramelize them.
  3. Don't burn it or make it brown.

Hot Chilies

  1. Once the onions are cooked, add the chopped green chilies.
  2. Let it cook for a min or two.

Tangy Tomatoes

  1. Add in the chopped tomatoes.
  2. Cook it till the tomatoes are soft.
  3. Add salt as per taste. This would fasten this process.

Spice It Up

  1. Time to spice it up!
  2. Add the spices:
  • 1 teaspoon turmeric Powder
  • 1 teaspoon red chili powder.
  • 1 teaspoon coriander Powder.
  • 1/2 teaspoon Black Pepper Powder.
  • 1 teaspoon Pav Bhaji Masala.

Mix, Mix, Mix!

Bhurji

  1. Crack in 2 eggs directly in the pan (onion- tomato base) on medium high heat.
  2. Mix vigorously to scramble the eggs.
  3. Keep mixing till the eggs are well cooked.

Gravy

  1. Once they're well cooked, Add 1/2 cup of water to it.
  2. Let it cook on medium-high flame, till the water evaporates completely.

More Eggs

  1. Grate the hard boiled eggs one by one.
  2. Use a grater with big holes.

Gravy Ready

  1. Once the water is evaporated, add the grated boiled eggs into the pan.
  2. Mix everything well.
  3. Add 1/2 cup water and let it cook.
  4. Adjust the consistency according to your liking.
  5. I like it semi-dry.

Garnish

  1. Garnish it with freshly chopped coriander leaves.
  2. Mix everything well.
  3. Turn off the flame.

Our Anda Ghotala is Readyy!

Now lets make a half fried egg.

Half Fry

  1. In another pan, melt 1 tablespoon of butter.
  2. Crack a egg straight into the pan, without breaking the yolk.
  3. Sprinkle some salt as per taste.
  4. Sprinkle some Black pepper powder, red chili powder.
  5. cover and cook it for a min.
  6. Garnish it with some chopped coriander leaves.

Anda ghotala is ready!

Serve it with a boiled egg and a half fried egg with some toasted bread or butter pav (Bun). It looks amazing and smells delicious. You can have this protein rich dish as breakfast or anytime you like. Who doesn't like to have eggs as breakfast and this is the perfect way to brighten and energize your morning.
