Cornbread Snack/breakfast Bar

This dish started out as an after school snack that I created for my kids, over the years its moved into the dessert realm as well. My kids's, like many, didn't like cornbread but they DID like peanutbutter and jelly and I came up with the idea for this dish. Many people will just say eeewwww I don't like cornbread when they hear whats in it but change their minds after tasting, now I find it easier to let them ask AFTER they try it, so please keep an open mind. Even though this uses eggs and milk the mix of grains makes this a healthy alternative to the usual cakes, using egg substitutes and skim milk could make it even healthier

Hit Up the Pantry and Frig

Here's what your going to need and some substitutes I use

  2 boxes Jiffy or other cornbread mix. (corn muffin mix was on sale and its basically the same thing)
  1 1/2 cups oatmeal, you can use flavored instants as well
  1 packet instant cream of wheat (optional)
  1 1/2 -2 cups peanut butter, I don't really measure. more gives a denser cake, less gives a more crumbly cake
   2 eggs
   1/2 cup honey
   Milk
   1 can diced peaches, you can also use crushed pineapple, strawberries or any fruit or your choice, I've even used strawberry jam

Presoak

pour the packet of cereal and 1 1/2 cups of instant oats in a container and cover with milk, allow to sit for 15-20minutes, stirring a couple times to mix and help the cereals absorb some liquid

Make Do

I had peach halves in the pantry, no problem, just dice them up, save about a 1/3 of the liquid, pour it all in with the cereal mix for now (use less dishes)

Mix It Up

dump the boxes of mix in your bowl, add the eggs, 1/2cup? milk, honey and peanutbutter and mix it up with a fork, pour in the peaches and cereal mix and stir some more. Allow to sit for 10-15minutes wiile you preheat the oven to 325f and grease a small casserole dish. Pour the mix into the greased dish and into the oven for about an hour or until a knife comes out clean. I put a small dish of water in the oven as well, not sure if it does anything but it doesn't hurt..

after 45minutes insert a knife in the center if it comes out clean your done, if not keep cooking until it does.  You can serve it warm with milk, room temp or cold
