Amazing Strawberry Shortcake
In this Instructable, I will show you how to make amazing strawberry shortcake. This homemade strawberry shortcake is easy to make and is sure to impress your friends and family. This is by far my favorite cake of all time! Probably because I love strawberries so much. If I can do it you can do it, let's get baking!

Ingredients/Tools
Ingredients:
- 1 cup of all-purpose flour (120g)
- 1 tsp. of baking powder (4g)
- 1/4 tsp. of salt (1g)
- 3 eggs (separated)
- 1/8 tsp. of cream of tartar (pinch)
- 1 1/4 cup of white granulated sugar (250g)
- 1/2 cup of unsalted butter (softened) (113g)
- 1 tsp. of vanilla extract (5ml)
- 1/2 cup of milk (whole milk, 2%, etc.) (120ml)
Strawberry Topping:
- 1 basket of strawberries (washed and dried) (1 to 1.5 lbs, 300g, doesn't need to be exact)
- 1 Tbsp of white granulated sugar (12.5g)
Whipped Cream Topping:
- 1 cup of Heavy Whipping Cream (240ml)
- 1/4 cup of white granulated sugar (50g)
Glaze: (optional)
- 2 cups of powdered sugar (220g)
- 2 to 3 Tbsp of Milk (22 to 33 ml)
- 1 Tbsp unsalted butter (melted) (15g)
Tools:
- Hand Mixer or Stand Mixer
- Bowls
- Spatula
- Whisk
- Cake pans or Springform pan

Whisk the Dry Ingredients
First let's preheat the oven to 350 degrees F. (176 C) Then let's mix together our flour, salt, and baking powder with a whisk or sifter.
Whip Up the Egg Whites
Now let's take our egg whites and add a pinch of cream of tartar to it and using a hand mixer or stand mixer mix the eggs until soft peaks form, like a thick foam.
Add Sugar and Mix
Now we add one half cup of our sugar to the mixed egg whites and then mix some more until stiff peaks form, until it resembles whipped cream. We basically created a meringue.
Add, Mix, Scrape
Now we add our egg yolks, vanilla extract, rest of our sugar, softened butter, to another bowl and mix them until combined, scraping the sides of the bowl as necessary.
Add, Mix, Scrape, Mix
Next we add in half of our flour mixture, then mix until combined, then add in our milk, mix until combined, then add in the rest of our flour and mix until combined, scraping the sides of the bowl with a spatula as necessary. You could probably just add all the flour and milk at once, but I like to do it at stages, to make sure it gets incorporated thoroughly.
Add, Stir, Add, Fold
Then we add about one fourth of our meringue to our cake batter and stir it in really well. After that we add in the rest of our meringue, but this time we only fold it in gently with the batter. This will help lighten up the batter and make the cake airy and fluffy, and not dense. Now your batter is ready to go.
Bake That Cake!
Now we take a greased cake pan, either a large 10 inch one like I have, or 2 8inch ones, or you can even use an 8inch spring form pan. Pour in all of the cake batter, then tap it on the counter to level it out. Next bake it in the oven 350 degrees F. (176 C) for 50 to 55 minutes until a toothpick comes out clean when inserted. Once the cake comes out of the oven, let it cool for 10 to 15 minutes.
Prep Strawberries and Whipped Cream
While our cake is cooling let's prep our strawberries. Wash and slice your strawberries then add 1 tablespoon of sugar for sweetness. You can omit the sugar if you like. Then take the cream and add the 1/4 cup of sugar to it, and mix with a mixer until it gets nice and thick.
Cut Cake in Half
If you did one large cake, you will need to cut it in half, a bread knife or cake knife will work well here. If you used two smaller cake pans instead, skip this step.
Spread, Add
Next we use about half of our whipped cream and spread it on the top of this half of the cake. Now just add about half of your strawberries as well.
Add, Spread, Add
Next we add the top of the cake, then spread on the rest of the whipped cream on the top, and finish adding the rest of our strawberries to the top. The cake is done at this point, but I like to add an extra step. :) It kicks it up a notch. But if you don't like your cake to be super sweet, you can skip this next step. But it will be worth it to do it, I promise. :)
Make Glaze and Drizzle
This optional step involves making a glaze by adding our powdered sugar, melted butter, and milk. We start with a tablespoon of milk, then stir, then add more milk, etc. until we get a nice consistency for our glaze. Then drizzle the glaze on the top of the cake, make sure to get the sides as well. Now your cake is done. ;-) Serve up a big slice and enjoy!
