Amazing Chicken Soup With Dumplings

This soup brings the "old chicken soup" to the next level. Whether you want to warm up from the cold weather, maybe trying to get rid of the flu, or just want to go on a diet, this soup does it all and it tastes great! You're kids will love it, especially the dumplings.
It takes about 30--40 minutes from start to finish, and it serves 8-10 people. You can cut the ingredients in half for less people; keep in mind though, that this soup can be refrigerated for about a week, so making more might be better.

Ingredients:
1 chicken(or you can use chicken parts, like legs and breast)
3 carrots
2 parsnips
2 celery sticks
1 big potato
1 medium onion
2 eggs
2 tbsp butter(or oil if you are allergic to dairy)
8 tbsp of semolina flour
1/2 tsp baking powder
salt
1 cube Knorr chicken flavor(they have at any Safeway in the condiment department)
fresh parsley

Start by washing the chicken really well, and empty the inside parts (they will not go into the soup). After that, put the chicken into hot water and let it boil. Keep an eye on it, because the chicken will leave a gray foam that  needs to be removed. This step should take about 20 minutes.

Adding the Veggies

After the foam is removed, you can add your washed whole vegetables and the Knorr cube.

When the veggies and the chicken are boiled, you gently remove them, and put them into a separate dish to drain and cool. You will be cutting them later.

After you removed the whole chicken and the veggies, leave the broth on the stove on low heat, and start making the dumplings.

To make the dumplings, you will need 2 eggs, 2 tbsp butter and 8 tbsp of semolina flour. If you are using salted butter, you don't need to add salt, but if you are using sweet butter, please add a pinch of salt to the composition, along with 1/2 tsp of baking power.

First you will melt the butter in the microwave and then add the eggs. Start mixing together. Slowly add the semolina flour, 1 tbsp at a time, until you get a thick composition.

Take a small metal spoon, first dip it into the boiling soup and then take a composition from the bowl and pour it slowly into the soup. Repeat this step until you finish your composition.
Cover the soup, and let the dumplings boil for about 10 minutes.

While the dumplings are boiling, cut the carrots, parsnips and the potato into small cubes and add them to the soup.
The chicken meat can be removed from the bones and cut into small pieces and added to the soup, or it can be  used to make chicken salad, enchiladas, or simply served with salt, whatever you wish.

If you like your soup a little bit more consistent, you can add the meat to the soup even though the recipe does not require you to do so. I like to put a little bit of the chicken breast, cut into little pieces, along with the veggies, and the rest of the meat I use for chicken salad.
After adding you cut vegetables and maybe your meat if you choose to do so, cut a some fresh parsley on top and serve hot

It's great because I make 2 different dishes in one shot :)
