Check the video where I walk you through this spooky recipe.
You Need
Special kitchen utilities you need:
- Blender or food processor with S-shaped blade
- 6 wooden popsicle sticks
- 1 small plastic bag to use as a piping bag
Your ingredients
For the granola spooky
- Grated coconut, 1/2 cup
- Rolled oats, 1/2 cup
- Sesame seeds, 4 tablespoons
- Butternut Squash, peeled and seeded, 3 tablespoons
- Coconut oil, 2 tablespoons
- Agave syrup, 2 tablespoons
- Cacao powder, 4 teaspoons
- Cinnamon, 2 teaspoons
- Chili powder, 2 teaspoons
- Salt, 2 teaspoons
- Ricepaper, 6 sheets
- 1 apple sliced in 2 to hold your popsicle sticks (or something similar)
For the pink glazer
- Blackberries, 1 or 2 berries
- Coconut oil, 1 big scoop
- Agave syrup, 1 teaspoon
Blend It!
First blend all the dry ingredients: the grated coconut, oats and sesame seeds. Add the butternut squash in your blender and blend again. Last, add the coconut oil, agave and spiced and blend until the granola dough sticks together and begins to form a thick ball in your blender. If it is too moist, add more grated coconut and oats.
Taste! Maybe you like more spices or salt?
Shape 'n Freeze
Roll the granola dough into small balls, about the size of a ping pong ball. Flatten the bottom and put on a plate. You can make about 6 balls.
Put the plate with the granola balls in the freezer for about 15 - 20 minutes, so the coconut oil hardens.
Put on a Dress
Take the balls out of the freezer. Pierce the popsicle stick through the bottom of your ball. Now pierce the stick into the half of an apple, so your popsicle granola balls stands on its own.
Take a pot with lukewarm water. Carefully soak 1 rice paper in the water, until the paper is soft. Now drape the paper over 1 popsicle granola ball. Try drape it evenly over the ball, so the skirt had the same length on all sizes. Repeat this step, so every ball gets a dress of rice paper.
Put on a Face
Now make the pink glazer! Mash the blackberry with a fork and mix the juice of the blackberry with the coconut oil and the agave syrup. Use your fork to mix until smooth. Make sure you have no blackberry seeds. It is a very small quantity, so don’t bother to take your mixer out.
Use the plastic bag as a piping bag: Place 1 corner of the plastic as a cone in your hand. Fold the rest of the bag over your hand. Put the glazer mixture into the corner of your plastic bag. Unfold the bag and squeeze the mixture well into the corner. Cut a tiny little hole in the corner of the plastic bag. Gently squeeze the mixture out of the bag. Give your spooky friends a scary face!
Leave the spooks on the apple and put them in your fridge for at least 4 hours. The rice paper will harden!
All Ready!
When the rice paper is hard, take the apples with the spooks out of the fridge. Remove the stick from the spooks; now they stand on their own!
Enjoy your Happy Halloween treat! And don’t forget to eat the apple too ;-)
