Almond Joy or Mounds Paleo / Keto Coconut Fat Bombs

After the success of my peppermint patty fat bomb version (here: https://www.instructables.com/id/Peppermint-Pattie-Paleo-Keto-Coconut-Fat-Bombs/), I realized this was kind of like a mounds / almond joy, so I decided to make a similar recipe to duplicate those candies.

Gather your ingredients and tools: Peppermint Patties:

  • 1/4 cup virgin coconut oil
  • 1/4 cup dried, shredded coconut. The brand I've used here has bigger flakes.
  • 1/2 tsp arrowroot powder
  • 1 tbsp slivered almonds / almond pieces
  • 1/4 cup chocolate chips - I used Enjoy Life brand, since they are dairy, nut, and soy free (not pictured).

Tools

  • Square mold
  • Measuring spoons and cups
  • Small mixing bowl

Mix and Freeze Filling

Mix all ingredients, other than the chocolate chips. I use a fork since the coconut oil is usually a bit hard.

Next, pack the mixture into your mold. Alternatively, you can form shapes with your hands, balls, mounds (haha), or patties. Put these in the freezer.

I didn't do anything fancy here, I just melted the chocolate chips in the microwave by putting them in for a minute, and then 15-20 second blasts until they all melted when stirred (Usually I use the double boiler method, but my trusty saucepan was otherwise employed). Then I dipped the filling bites in until they were coated, and then returned them to the container they were in in the freezer.

Keep them in the fridge for a frosty, satiating treat, and enjoy!
