Almond Joy Ice Cream Pie
This pie is reminiscent of an Almond Joy candy bar. It is easy to make and tastes so good, especially on a hot summer day!
Supplies
Serves: 8
Bake time: 15 minutes
Prep time: 15 minutes
Freeze time: 4 hours
For the crust:
6 Tbsp Melted Butter
8 Graham Cracker Sheets
1/4 C Slivered Almonds
1/4 C Shredded Sweetened Coconut
For the filling:
5 C Vanilla Ice Cream or Frozen Yogurt
5 C Chocolate Ice Cream or Frozen Yogurt
1/2 C Shredded Sweetened Coconut
1/2 C Slivered Almonds
1/2 C Chocolate Chips
1/4 C Chocolate Syrup
1 C Hot Fudge Sauce
Toasted Coconut (enough for garnish)
The Crust
First, preheat oven to 325 F. Then, add all of the ingredients for the crust into a food processor and chop it until it resembles wet sand. Press the mixture evenly into a pie dish and bake it for 15 minutes. Let the crust cool completely, so the ice cream doesn’t melt.
Preparing the Filling
Place the vanilla ice cream with the coconut in a medium mixing bowl. Beat it together until it is smooth and fully combined. Then, return to the freezer until needed.
Assembling the Pie
For the first layer, spread the chocolate ice cream on the crust. Evenly distribute the slivered almonds and chocolate chips. Then, drizzle on the chocolate syrup. After that, spread on the coconut vanilla ice cream.
Finishing Touches
To finish it, spread on hot fudge sauce and sprinkle toasted coconut on top of that. Freeze over night or until it is very firm(about 4 hours). Then finally, EAT it!
